Toppingfrmbottom -> RE: Tonights dinner is going to be potato's onions frozen carrots/green beans and meat ball. (12/4/2011 9:32:27 AM)

See I was told by not one, but two personal trainers who were also qualified nutritionists not to go below 2k, that anything lower than that is a starvation diet and bad for you. That is also factored into the fact I was going to a gym 3 times a week and more active, which i am picking back up again.

I am a big eater, I am used to large amounts of food, ironic since most days I don't eat at all, or eat very little, or sometimes will stuff myself silly cause I know there's not a lot of food at home and I won't have things ready for a meal and it's my last chance to eat, or in the morning I am mostly not hungry. "tiny" meals just don't cut it for me most times I am left hungry and I am hungry sooner than later. I am not satisfied by meals that are for example a small piece of meat a salad and a sweet potato, usually I am still hungry and want seconds. I have to work on that, because unless I work from sun up to sun down busting my ass at a rigorous and demanding days work, and we all know I am not lol. or have really worked up an appetite, that should be enough to satisfy me I think.

I also drink a bottle of water after dinner if the meal was reasonably sized and I still feel like I may want to eat more, and i don't need to.. It helps alot.

You know I used to love applesauce as a kid, and as an adult I can eat it too, but it's a take it or leave it more, leave it thing, but I was thinking that you aught to be able to make it at home, so if you know a good recipe pass it on!

I don't like the idea of using fake sweeteners, I use sweet and low in my ice tea when we eat out , but that's only because sugar won't dissolve in cold drinks, and I'm not about to pre melt sugar and carry it with me everywhere I go on the off chance I am going to go out to eat and want ice tea. I believe, and perhaps I am mistaken, but I will ask a diabetic nutritionist next time I can, that if you use organic sugar, the stuff that looks more like grains of rice and is a "dirty tan" color, in moderation, and not the white sugar we all recognize as sugar, it's better for you than fake sweeteners. A lot of fake sweeteners are not healthy for you and many of them cause a lot of bad effects for those who're taking them, things that don't happen when they're not using those fake sweeteners.

TFB, I'm a diabetic also. My nutritionist gave me a 1500 calorie diet. I tried eating the way she had every thing listed for me. But it was too much food. I was stuffed at every meal. And that's not a good thing. She had me eating 3 carb choices for breakfast, lunch, and supper, and 2 carb choices for a bedtime snack. I had to move one of the carbs from breakfast to a mid morning snack. And most days, I don't even have the mid morning snack. I moved one of the carbs from supper to a mid afternoon snack. And again, I don't usually eat that one either. And I haven't been eating my bedtime snacks as I'm not hungry.

The pot pies I made in the muffin tin are a perfect size for me. Along with a salad, I am full when done eating, but not stuffed.

I don't like buying prepackaged food, as it all has way too much salt in it. Consequently, that's why I started making my own cream soups for recipes. I have also made quick applesauce for a cake that called for it. And it tastes just as good as applesauce from a store, or the longer cooking applesauce you can make yourself.

I also use Splenda in all of my baking. I've made pumpkin pies using Splenda instead of the condensed sweetened milk the recipes call for. Any fruit pies get Splenda in them. Same with cookies. And there is no difference in the taste in anything.

Learned that one early on lol. Shopping is pure torture when you're hungry. We didn't buy more junk but what we ended up doing was going out to eat and getting junk food from one of the local junk food chains.

Another tip for when you go grocery shopping. Dont go when you're hungry, you're more likely to buy junk.

If you drink the water before you eat, and possibly a glass of water with some psyllium husks, it will fill you up and you automatically eat less.

A great rule of thumb I usually do when my jeans start pinching a bit is just toss the order or food around, for example I eat low calorie food like salads without dressing (with sweet peppers you really don't need much dressing, with beetroot a few drops of vinegar and a bit of salt and pepper are enough) first and really pig out on them, so when it comes to the more calorific cheeses and such, I'm already full and I only nibble.

That brings me to a question I was going to ask,When you buy frozen veggies, and put them in the freezer right in with the bag you bought them from the store from, how do you better protect them from ice forming inside the bags? I took a bag of carrots out yesterday, and it was completely encased in a chunk of ice. I am thinking maybe they need to be Saran wrapped or put in freezer ziplock bags? Sometimes the freezer de frosts a bit if someone didn't close it well enough cause the seals not always so good, but for the most part it stays well and truly frozen and still comes out with ice in the bag.

they'll freeze into a big blob. Freeze first, then bag, they'll stay separated that way.

Rachael Ray has a "Week in a Day" series out where she makes a week's worth of meals in one day, and she's all about saving time and effort as well as cost. I've been away from tv for a couple months, so I don't know if it's part of any of her shows, or if it's a book, but if it is a book, your library probably has it. It might be helpful to you.

When I was younger, I tried every tip going to reduce the stinging or streaming eyes. They were all right pain in the arse.

I just have learned to chop veryyyyy quickly .........lol

And this too from searching4mysir...quote:

Make sure when chopping onions that you leave the root intact as much as possible (until you get to the base of the onion) at first and that your knife is very SHARP (dull knives are more dangerous in the kitchen than sharp ones). That will help to limit the gases/juices released as you are chopping.

I still chop veryyyy quickly ;)

Knives and I don't get along so the chance of losing a finger or ten is too great which is one reason I use dehydrated lol.

TFTB, based upon what you have said with regard to no eating or very little eating and then binging --- have you considered perhaps attending a Overeaters anonymous group? I have never been but have known a few people who have and they have found it beneficial to understand why they eat as they do and people have found it beneficial in helping them see food differently, and change their eating habits.

They are free meetings -- you just have to go on their website to see what ones are around your area.

Oh I understand why i do it, it's not a great mystery that I need help figuring out.

I've thought about it, there really wasn't a lot of them close enough for me to go but if I was able to hunt up one with in my area, I'd give them a try.

Splenda is sugar. It is just reconstituted so it is lower in calories. It is great for baking, as it doesn't make the baked goods turn bitter. As a lot of artificial sweetners can.

As for applesauce, it is easy to make. You can either peel or not peel the apples. Core the apples and put them in water to boil. Once they are soft, drain water, and run apples through a collander. Then sweeten them as desired. They will taste almost too sweet. But the sweetness won't be as pronounced when the applesauce cools down. Then place in glass jars and put into a water bath for about 10-15 mins. Or if you have a pressure canner, follow the directions for it. Then remove and let cool down so the lids will seal. You can also put some redhot candies in a couple of jars to make cinnamon applesauce.

Yeah that too. Oh hell anything sharp. Sadly I have no offspring so it's me or noone. Maggie (feline owner) is no help at all.

I was grating today: sweet potato and apple for a sweet potato hash that I served with Garlic Green Bean Almondine (sauteed in olive oil) and a small blade steak.

Very hearty dinner and should hold me until morning.

Toppingfrmbottom -> the recipe calls for canned mato paste and broth, but I am home making it. (12/5/2011 10:28:57 AM)

Broth and tomato paste puree is easy enough to make.

It also calls for white corn tortilla's and I am going to buy the whole wheat carb smart ones, they have about 8 grams of fiber, which makes the carb count only down to 10 if you can find the right package.

Toppingfrmbottom -> RE: the recipe calls for canned mato paste and broth, but I am home making it. (12/5/2011 12:55:34 PM)

Does any one have a simple chicken stock and tomato puree recipe that don't call for like 5-10 diff ingredients and 10 diff steps? I'm not going to make it from scratch if it's going to take 30 minutes to cook and 20 minutes of prep, which a lot of these recipes I am finding do. also I need enough broth to make 32 ounces and paste to make

1 10-ounce can enchilada sauce or one 10 1/2-ounce can tomato puree

Toppingfrmbottom -> how do I make a good spagettie sauce with no sugar or lil sugar in it. (12/5/2011 1:00:56 PM)

Remember this is for a diabetic, and I don't like long complicated recipes so it needs to be very simple, but I also want it to taste as good or as close to canned as possible, as I find canned tasty.,

Duskypearls -> RE: how do I make a good spagettie sauce with no sugar or lil sugar in it. (12/5/2011 1:51:00 PM)

Tonight it shall be a sandwich of avocado, mayo, sliced tomato, onion and cucumber, sprinkled with garlic granules, salt and pepper. Yum!
