Hershey's extra dark isn't anywhere near dark enough.  If you want a good dark chocolate, look for something that's 56% cocoa.  That seems to be the peak concentration for a really smooth taste that's still somewhat sweet.  If you like it a little more bitter, 70% cocoa is incredible.  We've tried bars with a higher percentage, but they were just a bit too much for us.

I just finished eating a chocolate cross.  For some reason, my Granny still gets me Easter candy (I'm not complaining), and this year, instead of chocolate bunnies we got chocolate crosses.  I think she's trying to tell me something.  Oh well.  It's the tastiest cross I ever ate.  Um... I think.

I blame this on you, pahunkboy.  I just ate a whole chocolate cross in one sitting.  Geesh.  It was worth it, though.

Damn... I've been doing it wrong!!!  [:o]

The sternum slows down the knife thrust considerably.  Go in through the stomach and angle upward.  It's somewhat longer but is usually faster.

[damn I am up too late]

Denise is right on.  Whole Foods and Trader Joes and similar "upscale" foodstores are now carrying "appellation chocolate".  This means that its marked by region of origin, much like wine or some fancy coffee.  Its too expensive, but the Brazilian and the Curacao are dark, 70% and incredible.  And like many good things, you don't need a lot for a LONG lasting satisfaction.

There are some incredible chocolate and candy makers in the Chicago area...from a very traditional Belgian in Evanston who does really fine (puts Godiva to shame) handmade traditional ganaches and such...to this funky place on North Bridge that does things like chipolte-dark choclate creams and curry-pepper-chocolate bars.  They sound weird...they are weird...but they taste INCREDIBLE.

And I have to put in a plug for my daughter, who although she is pursuing a career in the theater, is an incredible candy maker when she wants to be (or when Dad begs her.)  I want MORE chocolate cornflakes!

E.

Cocoa- is actually an antioxident and good for you. American chocolate doesnt count tho- as it is too loaded with sugars.

My mom likes to make her own Easter candy. This year she got a mold to make baby Jesus in the manger. I still have mine in the freezer....how does one eat baby Jesus?...or even throw him away????.....lol. Guess I'm stuck with this one.

I am sorry, *ducks* for cover. LOL.

hey that is so sweet- granny and easter candy. Arent grandmothers wonderful?

Aldis sweet pickles are good too. Hey I am going to be an uncle on October 28th. We are so excited! I have a brother with kids--- but the momma calls the shots. So it will be different - more interesting being that my sister is expecting.

She will make a great mom. The sonogram shows the kid making a fist.

My brother in law needs to grow up some.

Ahh- but we are looking forward to it all.

:-)
