Denise is right on. Whole Foods and Trader Joes and similar "upscale" foodstores are now carrying "appellation chocolate". This means that its marked by region of origin, much like wine or some fancy coffee. Its too expensive, but the Brazilian and the Curacao are dark, 70% and incredible. And like many good things, you don't need a lot for a LONG lasting satisfaction. There are some incredible chocolate and candy makers in the Chicago area...from a very traditional Belgian in Evanston who does really fine (puts Godiva to shame) handmade traditional ganaches and such...to this funky place on North Bridge that does things like chipolte-dark choclate creams and curry-pepper-chocolate bars. They sound weird...they are weird...but they taste INCREDIBLE. And I have to put in a plug for my daughter, who although she is pursuing a career in the theater, is an incredible candy maker when she wants to be (or when Dad begs her.) I want MORE chocolate cornflakes! E.
