Chocolate Chip Biscotti

3 T olive oil
1/2 Cup sugar
1 tsp vanilla
1 egg

Blend

Add:
1 Cup flour
1/8 tsp salt
2/3 tsp baking soda (1/2 + 1/8)

Blend

Add 1/2 cup chocolate chips

Preheat oven to 300F, line cookie sheet with parchment paper, arrange dough as a log on paper, bake 35 minutes
Turn oven down to 275F, wait 10 minutes to make sure it cools down.
Slice log on angle, return to sheet. Bake about 9 more minutes.

Watch them disappear.

Guy Fawkes Day Cake (Parkins Cake)
adapted from Joy of Cooking


1-8" round cake

Ingredients:
1 stick (8 tablespoons) butter, melted
2/3 cup molasses (NOT blackstrap); alternatively, 1/3 cup molasses (can be blackstrap) + 1/3 cup honey
1 egg
1 teaspoon lemon vodka or lemon zest

5 ounces (1 cup) flour
2-5/8 ounces (~2/3 cup) rolled oats
1 tablespoon sugar
1 to 2 teaspoons ground ginger (according to personal preference)
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 teaspoon baking soda

2/3 cup milk

1. Preheat oven to 350°F and grease an 8-inch cake pan

2. In a medium-sized mixing bowl, mix the melted butter and the molasses (and honey, if you're doing half and half), then beat in the egg and lemon zest

3. In a separate, large mixing bowl, mix together the dry ingredients

4. To the dry ingredients, add 1/2 the butter mixture and stir until the mixture is uniformly moist, then add half the milk, stir, the other half of the butter mixture, stir again, and finally the last half of the milk and stir until thoroughly mixed

5. Pour into the greased cake pan, and bake 20-30 minutes or until a toothpick inserted in the center comes out clean

I copied the Guy Fawkes Day Cake recipe from http://jamminjelly.blogspot.com/2011/11/guy-fawkes-day-cake.html

What I actually used was the recipe in the Joy of Cooking, with the following modifications:

- No egg (none in original Joy recipe.)
- I did use blackstrap molasses
- I skipped the lemon zest and 1 T of white sugar
- I used rye flour instead of white

I am off white sugar and white flour for three months. Biochemically, rye four and molasses may be a cheat, but this is the first time I've made dessert in 3 weeks and my resolution did specify white flour and sugar so :P

The cake has just come out of the oven - as soon as I finish eating the Salmon with Ginger Soy glaze that I sent to Fornica w CMail I'll be eating it :)

I decided to try this because I couldn't find my Kripalu Cookbook or its Gingerbread with rye flour recipe online and the gingerbread recipe in JOC was too sweet. This one was underneath it.

Split Pea Soup with Vegetables from the Moosewood Cookbook

(I am not a vegetarian and add ham hocks or other pork product in the first step.)

Servings: 6-8

Ingredients:

* 3 cups dried split peas
* 7 cups water (may need more) or 7 cups vegetable stock (may need more)
* 1 bay leaf
* 2 teaspoons salt
* 1 teaspoon dry mustard
* 2 cups onions , minced
* 4 medium garlic cloves , minced
* 3 stalks celery , minced
* 2 medium carrots , sliced
* 1 potato , diced
* fresh ground black pepper

Directions:

1. Place first 5 ingredients in a large pot.
2. Bring to a boil, reduce heat to low, and simmer, partially covered for about 20 minutes, stirring occasionally to prevent split peas from sticking to bottom of pot.
3. Add onions, garlic, celery, carrots and potato. (You can saute these first or add them in directly if you want a fat free soup).
4. Partially cover and allow to simmer for about 40 minutes, stirring occasionally.(You may need to add extra water).
5. Season to taste with pepper and vinegar.

I made a batch last night. I had picked up a Smithfield ham on sale ($1.50/lb) a week ago and roasted it at a friend's house (to share it). Took the rest home, and simmered the peas with the bones for about 2 hours. Pulled the bones, added the carrots, celery, onions, thyme, sea salt, pepper, a little allspice, and some of the ham. No bad. Sometimes I'll pit a little mint in it; other times a spalsh of sherry.

Scott's Mango-Grand Marnier Bread Pudding
(fairly cheap, depending on what you have on hand...)

9x11x3 baking pan/dish full of 1/4-1/2" stale bread cubes (decent French bread, not that cheap-ass wonder/walmart shit...WTF is wrong with you? )

About a cup or so of good cane sugar
About a cup of Grand Marnier (or other orange liquer)
About 2 cups of diced mango
(shredded coconut optional)

Caramelize the sugar over low heat. Add about a cup of boiling water to the sugar with care (it may spatter). Stir until you have a syrup, then add the GM. Mix the mango in with the bread cubes. Pour the syrup evenly over the bread cubes. Stir gently. Bake at about 350F until a golden crust forms.

Top with white chocolate sauce (I always added some raspberries and a couple fresh mint leaves as garnish at the restaurant)

Scott's Posole Rojo

About 2 lbs. Mexican chorizo, fried and drained.
About 2 lbs. shredded chicken
About 6 cups white hominy, drained (or more, whatever...(
About 2 cups diced onion (pan-roasted are good)
4 or 5 cloves garlic, minced (prefer roasted, myself)
2 or 3 chiles anchos
2 or 3 chiles pasillas
(optional: a few chipotles, or a couple tbs of the sauce from canned chipotles en adobo)
2 or 3 tbs oregano
(optional: about 1/2 cup chopped cilantro)
about a tsp allspice
(optional: cumin (fresh ground from seed is best)
(optional: a bit of canela (true cinnamon)
3-4 ripe tomatoes, roasted, seeded, and cut in strips (or diced, whatever...)
enough beef broth to cover plus a couple cups more (I use Better than Bouillion beef base)

While it's simmering, cut some stale (or dry) corn tortillas into strips about 2" x 1/2", or whatever. Deep-fry them until crunchy and golden (I use white corn torts). Squeeze some lime juice into the soup if you want. Salt and pepper to taste.

Place tortilla strips in the bottom of a large bowl. Pour the soup. Garnish or top with diced avocaso, diced tomato, diced onion, chopped cilantro, radish slices, lime zest, a lime quarter... squeeze a bit more lime into it if you want. The avocado is a must for me.

This is a good cold weather soup/stew. Groove away!
Toast, deseed and destem the chiles, and pulse in a food processor (you want them kind of coarsely ground).

Simmer all the goodies until you like the consistency of the onions/hominy, or it's all melded together.
