I absolutely love to cook. It calms me when I'm upset, nervous, or sad. It's an act of love for those I care about it. I always thought I should be a chef, but I was afraid that I wouldn't LOVE it anymore. In succinct terms it's my passion. I love to experiment and try new things some successful some not so much. So, I thought I would create this little thread where people could share failures and successes or in general favorite recipes.

Tonight I made a non-traditional parsley pesto with roasted pecans instead of pine nuts. I took a chicken breast and stuffed it with pesto, cherry tomato halves, and swiss cheese. It turned out beautifully.

i've always sucked at making baking powder biscuits, they always end up flat and hard. saw a very simple recipe that was flour, cream and lemonade (sprite or 7 up). best ever! it isn't cheating if you still have to measure and mix, right?

individual pineapple tarts.yum. we make most thing from scratch. Master created a book where our favorite recipes are written down . its kept in a safe. not many are allowed to look in it.

No, it's not cheating. I can really cook in the kitchen I have issues baking though. It's odd to me although I've gotten pretty handy with the baking no matter how hard I try my chocolate chip cookies never turn out right. I did have a nice little success with Andes mint cookies this Christmas. Everyone loved them.



Faves my husbands grandmother did something of the same thing for him when he was single and living on his own. Unfortunately, he had the book in storage and someone stole everything including that from his storage unit. So, I'm currently experimenting with rice pudding recipes because that's his favorite. I should write a book up that I can flip through and save for my children (if we ever have any). I've just been experimenting lately adding a bit of this and that. Those recipes that my husband likes I keep in mind and those he doesn't I forget. Although, at some point I'm bound to forget.

Some people have asked for the Chicken Pot Pie Recipe-

I have made it very simple, and even cheated for those that do not, or can not cook biscuit dough. If you have questions, please feel free to email me. I am always glad to share.

I am gonna start adding stuff to the Feeding Dragon's thingie Forni has going on.


Until then-


1) put water in the pot- I use a stock pot



2) add chicken- I am going to list seasonings for about 6 or so cups of water and two to three large breasts.



3) season water with-salt, pepper, onion powder, garlic powder, poultry seasoning, celery seed and season salt, Montreal seasoning (about 1-1 1/2 tblspoons each, just kind of taste it as you go and get it where you want it.)



4) Add veggies, I use baby carrots so I don't have to chop them, but you can if you want to, but add them as the water starts to get warm, so that the veggies get the flavor of the chicken. Veggies should be cooked as well, because the water has to boil to cook the chicken, so you are cooking every thing at once.



5) Pull the chicken out once it is cooked to desired doneness, you may have to cut it into chunks or however you want to do it. Leave the water with the veggies on to continue cooking, let it be at a rolling boil. You may want to pour out a little of the water, depending on how much gravy you want around your filling. This is kind of a judgement call based on how you like it, and how big a pie your are making, and how many you are feeding.



6) blend about a half cup of flour with water, it needs to be COLD water, because the water from the broth will cook the flour and make it thick in the bowl. You want it to be kind of runny, because you are just going to add it a little bit at a time. As it cooks, you will see the broth thicken to a gravy, so when it gets to a gravy consistency, you won't add any more.



7) Add your chicken to the gravy/veggie mix, and just kind of blend. Keep this on low heat, just so the flavors blend.



8) In a different stock pot-oven safe if you please- take the canned biscuits that you get in the 4 pack, and use a can or can and a half half if you need to, and about half way up the side of the pan, line around it, the dough should stick, because you don't really need to spray it with anything, it just makes things more complicated. But anyway, you just go about half way up the side of the pan, and all the way around, I overlap the dough, just so it holds in place. SO you will have no dough on the bottom, no dough about half way up the pan, and then a ring of dough around the middle sides of the pan.



9) Add filling. Be careful, make sure you don't get burned that shit is hot, and it hurts if it gets on your skin. But make sure your taters and carrots are cooked to tenderness.



10) Top with biscuit dough. Just kind of flatten it in the palm of your hands, and place it in a little overlapping circle over the top of the filling to make the top crust.



11) place in the oven, usually at about 350, and cook until biscuits are cooked thru and golden brown.



12) Let stand about 2 minutes, serve in whatever bowl, and like I said, I top mine with a little bit of butter, but only by the serving, because not everyone likes that flavor.

Lol. You don't want my biscuit dough, I don't know how to make biscuits. I have tried one time, and it was so traumatic I cried for days. Lol.

My daughter gave me one of those new waffle makers. Just tried it out. Used the mix and it claimed to make 5 waffles. With my new maker it took it all to make one. No porblem it came out execellent.

I have a waffle recipe that makes waffles so damned good you don't even have to put anything on them......although my home made applesauce warmed is amazing...

The recipe makes quite a lot and I have discovered I can cool them, then put them in a big freezer bag, and take them out as wanted, and pop them in the toaster........just like those you get at the grocers. Only wayyyyyyyyyyyy better! I need to make more this weekend.

I want to make a pan of lasagna this weekend but don't have all the stuff and not sure I want to bother going to the grocery store on the way home.

For Chicken Pot Pie topping, I use the Joy of Cooking's Quick Drop Biscuits - just drop em on top of the pie.

Note: butter and milk need to be cold.

I mix in Cuisinart - mixing in butter is a PITA by hand.

Quick Drop Biscuits

ingredients

* 1 3/4 c. sifted all-purpose flour
* 1/2 t. salt
* 3 t. double-acting baking powder
* 4 to 6 T. chilled butter
* 1 c. milk

directions

Sift together in a large bowl the flour, salt and baking powder. Cut shortening into dry ingredients. Add milk. Stir a scant 1 minute. Drop from a spoon onto an ungreased sheet and bake 12 to 15 minutes or until lightly browned.

I just put the waffle recipe on Forni's soup and dessert thread in off topic. I will also add my new favourite biscuit recipe.

Lithium, I've never used the biscuits as a bottom crust, only as a top. I bake extra biscuits on the side to serve with the meal with homemade fruit butters.

As far as baking powder biscuits go, they change if you use butter or other shortenings. Butter makes them tender, crisco or lard makes them flaky.
