DAMMIT> I didn't think to look at a spiral ham.

There were not a lot of entrees last night. Two folks who said they would bring entrees didn't...so it was quite on the veggie side. And the boy that brought "gluten free fried chicken" ...ended up not listing all of the ingredients. It did have something in it and the Domme did not feel well later. Not good.

I went with two old standbys--one was jumbo slices of tomato with a big wedge of mozzarella cheese, ground pepper, off the vine basil and olive oil--all organic. The salad was also all organic--field greens, fresh mandarin orange wedges, blueberries, a variety of other organic veggies--and a storebought gluten free dressing. I made up a tray of gluten free chocolatey desserts (store bought at the local health food store) and a fruit assortment. All three disappeared quickly!

of course, not sure if that was because they were tasty....or because they were just hungry! I'm going to do test recipes for the next 30 days and when I come up with a good one, it's going to the next party!

Fresh herbs anything made with frsh herbs tastes awesome.

My personal favorite snacks are surinam

lambsburger on french toasted bread, pistolets we call em, with pickles and thai chili sauce.
and.... slamonlol i mean salmon on pistolet with avocado, salt and pepper.

also
shrimp in cocktail/whiskeysauce

and you can make small bites outta them

I know you cant have bread
but that doesnt matter.
Good flavors go together anyway
Leave out the bread and the dish is just as good.
even better

The best dressing ever is
mustardhoney sauce
just mustard with honey is the base and you can add any spice or herb you like.

Try yoghurt dressings as its not as fat as mayo.

Another good gluten free entree to keep in mind is a simple roast, either beef or pork. Bit of ground pepper and just a little salt and some garlic for seasoning, and you're good to go.

Add roasted potatos or mashed potatoes and a nice salad and you've got a wonderful meal, that's very simple to prepare.

If you feel like getting really creative, get some rice flour and learn how to make flatbread with it (which is super simple), which can then be used as a base for sandwiches or to sop up gravy and juices or as a side with salad.

ETA: MrBukani also reminded me of another tasty possibility, dolmathes. Pickled grape leaves stuffed with seasoned ground meat (usually lamb, but they can be made with other meats). Serve those along with feta or goat cheese, olives, and assorted fresh fruits.

Dammit, Mr. Bukani! Now I am hungry.

I just adore cooking while on holidays in the Netherlands. So much exotic stuff to be had as part of the normal supermarket spread, all those cut up and ready to use vegetables. By now we even have a set list of "must haves" that I make every holiday.

I just got back from the natural grocer- I went to one about 30 minutes away (as opposed to nearby) and they had a huge gluten free section. So I'm going to try this next party:

Polenta, baked with fresh provolone, oregano & tomato, served over tri-color gluten free rotini wok tossed with fresh spinach and marinara--just need to get some of those trays with sterno cans to keep it hot. Checked all the labels--all gluten free.

I'll try Mr. Bukani's dressing tip...and serve with a spinach salad with bacon crumbles, grape tomatoes and hard boiled egg.

A spinach salad like that is just wonderful with honey mustard dressing.

But why do you want to serve the polenta over pasta? Both the polenta and the rotini sound quite good, though.

Regarding gluten free and vinegars:
http://www.glutenfreedietitian.com/newsletter/vinegar/

(Would have to check the type of vinegar used in the mustard as well.)

MrBukani -> RE: In Need of EASY Gluten Free recipes (3/18/2012 5:04:55 PM)

1/3 cup honey
1/4 cup Dijon mustard
1/4 cup white wine vinegar or cider vinegar
2 tablespoons lemon juice
1 garlic clove, minced
1 cup vegetable oil

you can make it with a little mayo also
some like vinegar some dont
just like garlic there is many varieties to it.
just start with a little honey and mustard and add what you like.
I never like to much oil, not really necessary either

Oh and my ex used to make simple guacomole just with creme fraiche and avocado
great basic diptip also to wich you can add on with flavors you like. little salt n peppa off course never hurts

I kinda like pure flavors.

didnt know there could be gluten in mustard but i guess you have to check everything that has more then one ingredient.

good luck

It is too starchy? too heavy?

I thought it would be something filling and those who didn't want the polenta could at least have the pasta and sauce. I could substitute the polenta for eggplant, but seems like not everyone is big on eggplant like I am.

Polenta is actually a type of pasta so while baked wedges of it are delicious, if your lovely Domme's are watching their figures they might think it's carb overload!

oh crap. good to know!! Thanks. I had no idea. (I just knew it was tasty)
I think a bed of spinach would be better then, and I'll save the pasta for a future dish.

Polenta is basically grits.

hausboy -> RE: In Need of EASY Gluten Free recipes (3/18/2012 10:02:20 PM)

I always thought grits were in the "wheat" family. But I guess the texture is similar to that of grits.

Either way, polenta is so easy to prepare (and I personally like the taste) I figure I could put a nice salsa or other topping to spice them up.

mynxkat -> RE: In Need of EASY Gluten Free recipes (3/18/2012 10:21:14 PM)

Grits are ground corn or hominy (which is alkali-treated corn). Polenta is essentially the same thing, just preparation is slightly different for the two. You could also, if you buy cornmeal to use for your polenta, take a stab at making cornbread. Being a southern U.S. gal, to me proper cornbread doesn't have any flour in it, and is very dense. It's terrific served with bean soup or ham and beans.
