Is there a particular type of saddle that my Mistress could place on me that would protect me from back or hip injuries? If so, what should she use?

I don't do this anymore but I used to be a human pony Mistress. Most of the work was with rigs or on the flat but I did have one male pony who had his saddle custom made.
He stood upright and the saddle had straps that fitted like a girth around the belly and a martingale over his shoulders (holding the saddle firmly in place) The back of the saddle (Cantle) was overly pronounced so that I could sit on it comfortably and even ride side saddle without knocking him off balance. He always remained upright and was able to move elegantly and at a good pace.

I would strongly advice designing an upright saddle, if you want a saddle at all. you can't do much but crawl around un-elegantly when you are on all fours because your arms don't work like the equine versions front legs and your legs don't work like the equine versions back legs.
Some of the custom made saddles (made to fit guys on all fours) are an absolute waste of time for anything other than humiliation. Someone is just making a killing on something that clearly can't work.
