Our chickens are producing a carton of eggs a day, we need recipe's to use them up lol. Breaskfast, lunch, dinner, desert, brunch, any egg recipe you tried an liked you got it, list it here.

don't know any fancy recipes but always loved this one:

two slices of bread toasted and buttered
mushrooms - fried
bacon - grilled
eggs - poached

assemble for a gorgeous breakfast sandwich, best if you can keep the yolk runny...

Or if there's one nearby you could donate some to a shelter

I don't think shelters would take eggs grown from a random persons back yard farm,and not a store, I thought about doing that otherwise. It's to bad we couldn't boil a bunch up and give them to homeless people who're always holding signs saying i am hungry need food, but i wouldn't trust food some stranger gave me that wasn't pre packaged or nothing.

It's tastey, but won't use eggs in mass quantities.....

Egg Bowls


Lean Bacon
Eggs
Salt
Pepper
Mild Cheddar Cheese
Chives

Pre-heat oven to 375.
Cook bacon for 4 to 5 minutes in a skillet, removing early so the bacon would be flexible if served (not crisp.)
Oil all of the cups in a muffin pan then wrap the strips of bacon around each cup, saving 1 to 2 strips
Cut the remaining strips of bacon and put the pieces in the bottom of the cups
Break eggs and pour one into each cup.
Season each cup with salt/ pepper then cover with cheese and chives.
Bake for 20 minutes and serve.

Talk to your local restaurants. They love fresh eggs.

I can't find the talk I heard - I don't have time - but there was a guy who sold eggs to a restaurang (asked some outrageous price) because real farm fresh eggs are better to cook with.

You could have just stumbled upon a new business....

I do crustless quiches and have them throughout the week for breakfast.

Pie plate - buttered or oiled

6 eggs beaten with 1 cup of milk or cream. Pepper to tase
Pour over 8oz of shredded cheese and whatever else you'd like: broccoli, sauteed mushrooms, bacon, sausage, chorizo, etc.
Bake at 350 for about 45 minutes or until a knife inserted into the center comes out clean.

As an alternative add cumin & cayenne pepper (or Taco seasoning): pour over shredded chicken, black beans, corn, diced green chiles and shredded cheese. Makes a great dinner fritatta. I do this in rectangular baking dish and it makes 6 servings.

if you can find a restaurant very nearby and can deliver fresh eggs every couple of days or every day they will pay very good prices as it is fairly hard to get really fresh eggs.

BTW chickens are cumaltive layers. That means a hen will keep laying eggs until she has a certain number in her nest. So if you simply leave some eggs in the nest you can stop or reduce her production.

I make quiches. I absolutely love them.

Around here, homeless people aren't that picky about the food you give them. They rummage through garbage cans to find anything at all that they can eat. I'm sure giving them some hardboiled eggs or egg salad sandwiches or some quiche would be sheer heaven to them. If I had that many eggs to waste it's definitely something I would be doing.

Stick a sign at the end of the driveway "Eggs $3."

Take down the sign when they are sold.

We used to do that all the time in my hometown. My family were farmers and hucksters. We'd sit on the side of the road with a pick-up truck and sell fruits, veggies, eggs and honey out of the back until it was all gone and start all over the next day.

When I was a teenager, we had chickens and sold them them to the neighbors during the summer. It was harder to get those eggs gone during the winter when all the summer people had gone home.

Free range, organic eggs just taste better. We buy only those now.

Quiches and frittatas use a lot of eggs at a shot. OsideGirl's recipe looks yummy.

We also give them to neighbors, who're delighted to have fresh eggs, my dad gave 3 dozen away this morning to the man behind us.

My dad doesn't want to fuss with selling them, A lady where i walk dogs said she'd pay him for the eggs how much did he want for a carton and he said naw i don't want to sell them. I'll just give them to you.


I told him you could make some good money off selling eggs an his reply was i don't want to fuck with it.



But yes, farm fres eggs where the chickens live high on the hog, so to speak, and are pampered and fussed over and can lay at will and not be forced, much, much better than store bought.

I would call around to homeless shelters to see if they could use them, soup kitchens etc.

The soup kitchen and homeless shelter cllosed for good, last year, but the salvation army has a feed the homeless program I could check into. They take food strait to the homeless and also hand out goody bags .

Recipes I got.

I've always called this xmas casserole, since it's a make ahead breakfast meal and works great for a houseful of people on xmas morning.

Ingredients

7 slices white bread, crusts removed and cubed
2 cups shredded Cheddar cheese
6 eggs
3 cups milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked or 1/2 lb browned pork or breakfast sausage, crumbled


In a greased 11-in. x 7-in. x 2-in. baking dish, combine the bread cubes and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Top with bacon. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 50-55 minutes or until a knife inserted near the center comes out clean.

It lasts a couple days refrigerated, but doesn't freeze well.




Really, I think your best bet is to learn how to cook an omelet. An omelet can be breakfast, lunch or dinner. They can also be dessert. And you can fill them with whatever you want.

Puddings also use a lot of eggs.

I'm making these for Passover:

Molten Chocolate Cakes

1 cup unsalted butter or unsalted margarine*
8 ounces semisweet chocolate chips, or bars, cut into bite-size chunks
5 large eggs
1/2 cup sugar
Pinch of salt*
4 teaspoons flour (For Passover: 4 t matzo meal, ground in a blender to a fine powder OR 4 t unsweetened cocoa powder)
8 extra-large paper muffin cups (or use regular paper muffin cups, which will make 12 cakes)

Garnish:**
1 (6 ounce) container raspberries, barely moistened and rolled in about
1/2 cup sugar right before serving

Directions

Melt butter and chocolate in a medium heat-proof bowl over a saucepan of simmering water; remove from heat. Beat eggs, sugar and salt with a hand mixer in a medium bowl until sugar dissolves. Beat egg mixture into chocolate until smooth. Beat in flour or matzo meal until just combined. (Batter can be made a day ahead; return to room temperature an hour or so before baking.)

Before serving dinner, adjust oven rack to middle position; heat oven to 450 degrees. Line a standard-size muffin tin (1/2 cup capacity) with 8 extra-large muffin papers (papers should extend above cups to facilitate removal). Spray muffin papers with vegetable cooking spray. Divide batter among muffin cups.

Bake until batter puffs but center is not set, 8 to 10 minutes. Carefully lift cakes from tin and set on a work surface. Pull papers away from cakes and transfer cakes to dessert plates.

Top each with sugared raspberries and serve immediately.

Footnotes

*Make sure you use unsalted margarine; otherwise, the cakes will be too salty. (You can use salted butter, if you like, but remember to omit the pinch of salt.)
** The raspberries look pretty but I skip them when presentation is less important.

Apple-Matzoh Kugel

4 large apples, Granny Smith or any tart apple, cored and cut into medium dice
1/2 cup light brown sugar
1/4 cup orange juice
6 plain matzohs
8 eggs
1 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups sugar
1/2 cup (8 tablespoons) butter or margarine, melted
1 cup golden raisins
1 cup dried apricots, medium, chopped
4 tablespoons butter or margarine, cut into small pieces, for casserole topping

Preparation

1. Preheat the oven to 350°F.

2. Toss the apples with the brown sugar and orange juice, set aside in a medium bowl.

3. Break the matzoh into 2- to 3-inch pieces and soak in 1 cup of warm water until soft but not mushy. Set aside.

4. While the matzoh soaks, beat the eggs with a wire whisk in a large bowl until blended. Add the salt, sugar, cinnamon, melted butter, raisins, and apricots.

5. Squeeze the liquid from the softened matzoh and add the matzoh to the egg mixture with the apples. Stir the kugel well and pour into a lightly greased 2 1/2-quart casserole dish or a 10x14-inch pan. Dot the top of the kugel with the 4 tablespoons of butter.

6. Bake the kugel for 1 hour. Cover the top with foil if the top begins to become too brown early in the baking. Remove the kugel from the oven and cool to room temperature.

Cook's Tip:
The kugel can be made 2 days ahead, cooled, and refrigerated, covered. Bring to room temperature and reheat in a 350°F oven.
