What is "Beef Strognaoff"?

I make something that I call 'Beef and noodles,' but I am unsure what makes a stroganaff a stroganoff.

Can I call what I make a 'stroganaff'or no?

Ah well.

Beef and noodles we shall feast upon tonight.

You bake it? Fuck! THAT is what I have been doing wrong. I thought that it was just stuff you put over noodles.

My answer! You bake beef stroganoff. Beef and noodles are served au naturele. However yu spell that.

It often has mushrooms in it and onion, but for it to be Stroganoff it would have sour cream.
Originally it had mustard in it as well...some recipes still do.
I have seen it made with cream cheese instead of sour cream.

Beef stroganoff is typically thinly sliced tender beef not ground. It does indeed have sour cream stirred into the sauce moments before spooning lover fresh egg noodles. Mushrooms, shallots, onions are all common vegetable additions. If mustard is used it is typically Dijon mustard. The sour cream is not noticeable other than slightly changing the color of the sauce. It's used to slightly mellow out the flavor of the sauce and add just a touch of creaminess. You should give it a try. If interested I will post my favorite beef stroganoff recipe for you.

and red wine... there is actually a goulash recipe that tastes like beuf stroganoff, lemme find it...

I leave out the flour, use fresh peppers and throw in a few potatoes instead, it's great if you have stewing beef, you just cook it for a few hours and it will melt in your mouth

Classic Beef Stroganoff

2 pounds beef chuck roast
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
4 ounces butter
4 green onions, sliced (white parts only)
1 clove garlic, minced
1 lb mushrooms, washed & sliced
4 tablespoons all-purpose flour
2 cups beef stock or 1 10oz can beef broth
1 teaspoon spicy brown mustard

1/3 cup sour cream
1/3 cup white wine
salt to taste
ground black pepper to taste
Directions

Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long.

Season with paprika, salt and pepper.

In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side. Add the onions, muchrooms and the garlic and cook slowly for 3 to 5 minutes, then push to the side with the beef strips.

Stir the flour into the juices on the empty side of the pan. Pour in beef stock and bring to a boil, stirring constantly. Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.

Five minutes before serving, stir in the sour cream, and white wine. Heat briefly then salt and pepper to taste.

Serve over hot egg noodles.

Anyone want the 2 slow cooker recipes that I got? One calls for red while the other calls for white.

I also use fresh mushrooms. I had to fight Bo over the mushrooms when he wanted to use them for something else.

For Stroganoff to be Stroganoff it needs red wine, sour cream (really, Schmand, but I don't know if you can get it in the US), onions, mustard, and most important, sliced gherkins.
Mushrooms however, have no place in beef stroganoff.

Best served over homemade SpƤtzle.

I don't think you have to bake it. It just has to be strips of beef in a sour cream sauce, served over noodles.

I used to love beef stroganoff as a kid. My mom used to make it a lot. Unfortunately it's too heavy for me these days and I can't eat it. You can bake it but then it's called beef stroganoff casserole. If you make it by making al dente egg noodles, and the beef, sour cream mixture in a pan then it's just stroganoff. It's not difficult to make and you can play around with the sauce. I've seen some recipes that leave out the sour cream but to me that's just so very wrong lol.

Stroganoff requires sour cream and paprika. Personally, I don't make it. I'd just add a can of cream of mushroom soup to leftover pot roast, myself.

I use to love beef strog untill one time I
was eating it and came across something
I couldn't identify... It wasn't a mushroom,
it wasn't a bit of grissle from the meat...
I had no idea and still don't so thats ruined
it for me...

As for the question, to me it's just, beef and
mushroom pasta with a creamy sause through
it.
