You want it easy and shiny, not sticking to the bowl. Add a sachet of raisins and two of succade. Let rise, covered, to about twice the original size; ca 40 mins. Halve the dough and make two large bun shapes. Trim the sides and flatten. Let rise for another half hour or so; if you'll be using a pan, let it rise in the pan. About half an hour. Whip some eggs and coat the cake. 400°F or so, low in the oven, for 30~45 mins (i.e. until done inside). I'm sure one could sub Stevia or the like if necessary, but you need some sugar for the yeast, etc. Not one of my favorites (raisins aren't my thing), but there ya go. IWYW, — Aswad.
