I am always on the hunt for new, easy, and yummy vegetarian recipes.
My partner is a great source but I think recipe swapping can be fun.

So if you have a vegetarian recipe that you enjoy.
I'd love to hear it.

Most things in my house are non-vegetarian as my husband is a carnivore, so no personal recommendations but I am totally hooked on browsing TasteSpotting which has dozens of links to recipes every day. I did a test search on 'vegetarian' and 'vegan' and got hundreds of each and I'm pretty sure those are just the ones that have the word vegetarian or vegan in the title, so there are lots more if you're willing to browse. The photos are so yummy I find myself drooling even over things I don't like.

Define "easy," for example - how much prep time? How many dirty dishes? How many kitchen appliances? How many ingredients?

I always get compliments for the Moosewood Cookbook's "Best Ever Split Pea Soup." I've never tried this crockpot version but it seems like a good idea. From groups III and IV, I just add the thyme and parsley.

Best Split Pea Soup

prep time: 0.5 hr
total time: 8 hr

Makes 6 servings

This is originally a vegetarian recipe, but add a ham bone for more flavor.
ingredients

I.
3 cups dry green splits
about 7 cups water
bay leaf
2 tsp salt
ham bone

II.
one cup minced onion
3 cloves crushed garlic
1 cup minced celery
1 small, thinly slice potato
2 cups sliced carrots

III.
1/4 cup dry red wine
1/4 tsp dry mustard
1/4 tsp thyme
few drops sesame oil

IV.
3 Tbsp vinegar
1 cup chopped tomatoes
1/4 cup freshly chopped parsley

Directions

1 Put ingredients in group I in crock pot. Sauté group II ingredients. Add to pot. Let cook all day.

2 About 15 minutes before serving, add ingredients in group III.

3 Just before serving, add ingredients in group IV.

Eating vegetarian is new to me so I am trying to keep it interesting yet simple. Lol

Oh I like soups.
Easy to me means less than 30 min prep time needed and you don't need to buy half the seasoning isle to make it. Lol

Take any vegetarian recipe, add bacon, or ham or pancetta or lard or salt pork.

What I am going to try tomorrow.

Vegetarian Shepard Pie

1 1/2 pds of sweet potatoes chooped and peeled
2 tbsp of margarine
1/4 tsp of black pepper
1 pk of Yves or Morning Star Ground Crumbles
1 green pepper chopped
2 garlic cloves
1 c vegetable broth
1 cup frozen peas, corn, and carrots

1. Boil sweet potatoes for 15 minutes. Drain. Add margarine and pepper. Smash.
2. In a skillet cook crumbles, green pepper and garlic for 5 minutes.
3. Add vegetable stock. Boil.
4. Spread on baking pan. Top with sweet potato mash.

Bake for 15 minutes at 400 degrees

Here's a good vegan cookbook: The Angelica Home Kitchen: Recipes and Rabble Rousings from an Organic Vegan Restaurant

My favorite (I add 1 t Italian Seasoning and cook on the stove top like regular rice rather than bake in the oven.):

Three grain pilaf

1 c. white basmati (or jasmine) rice
1/2 c. millet
1/2 c. quinoa
3/4 teas. sea salt
1/2 c. scallions, minced
2 T olive oil (omit oil!)
3 cups water or stock

Preheat oven to 350 degrees.
Combine grains w/salt, scallions, and oil in heavy-bottomed 2 quart saucepan or casserole. Cook uncovered over a medium flame, stirring constantly, until the grains begin to brown and are fragrant and toasty, about 5 to 7 minutes.

Add water or stock and bring to a boil.
Cover and bake in the oven for 30 minutes.
Remove from oven; allow to rest for 5 minutes.
Fluff with a fork and serve.

I substitute blends for some spices:

- If it calls for basil, thyme, oregano, etc., I just use Italian seasoning. (I do have Mexican oregano for Latin dishes.)

- If it calls for cinnamon, nutmeg, allspice, etc., I use pumpkin pie seasoning. (I do have allspice berries and cinnamon sticks and will use the spice grinder if sufficiently motivated.)

I do have tons of spices. I sort them by:

Use frequently
Dessert spices
Savory spices
Indian spices
Thai spices
Blue moon spices

If you are going to start experimenting with grains I recommend you go to a Whole Foods with a bulk section and try them a cup at a time until you discover which ones you like. My mom and I save money by buying 25# bags of rice and quinoa at our local health food store, which gives us their catalog price for this. I've shopped at other small health food stores who do the same, as will Whole Foods.

Quinoa is just not affordable when bought at the supermarket.

Thanks for the advice about the grains and I like the looks of that book.
I wish there were more vegetarian restaurants locally.

Their apple crisp is unusual and yummy and I've made the Spinach-Feta Casserole for family dinners and potlucks.

Spices are one of those really small investments that will really make your food so much better. Just buy whole spices not ground and toast and grind yourself. this purveyor ships nationally andhas pretty good prices.

A little coriander, cumin, cardamon, cinnamon, nutmeg, cloves (all toasted and ground) and yogurt will turn a pretty boring vegeatble stew into a great tasting and smelling veggie curry.
