ORIGINAL: mnottertail most of the stainless you are gonna see is 404 to 420 or so (its a manufacturing code) which is non-magnetic meaning no iron, this is why it does not rust, it has a high nickle content for softness and chromium for shine, but of course iron (actually steel) has stiffness, so in the knives stainlessware and so on they add some carbon to it for stiffness. any way, unless you have a lot of tools and equipment, you probably want a stainless with high nickle (soft) and little to no carbon, and no chromium (brittle)..... Umm.. No. The entire 400 series of SS is nickel free, magnetic and does indeed contain iron. The reason it doesn't rust is the addition of at least 10.5% chromium which creates a self-healing chromium oxide film that resists oxidation. You cannot have SS without chromium, or iron for that matter. ~stef - chief metallurgist to King Charles the V of Spain
