I have no idea of if there is any kind of a list or chart. Though I suspect that if you were to Google roleplaying ideas, you'd get enough suggestions that you could then compile into a list yourself. Or just think of a list of animals, and there is probably *somebody* who enjoys that kind of roleplay somewhere.
Does a person's personality match their animal? Sometimes. Sometimes not. And then you have to take into account that different individual animals have different personalities. While this may be a fetish a lot of people have in common, their approaches to it won't be uniform at all. The only way you can find out about those sorts of things is by getting to know the person.
