But, please if you do want to participate please don't pick purposely nasty things like snails, or pickled pigs feet or outrageous things or really expensive hard to cook things.


I won't eat fish, or mushrooms, or things like pigs feet or cows tounges, snails etc . I have limited cooking abilities so really off the wall technques prolly would just confuse me.i I am diabetic so that needs to be taken into consideration

You're right, it does sound like a fun game. I'll have a think about some good not-too-tricky recipes for you. How do you manage your diabetes? Do you aim for a certain number of carbs in a meal? How about calories? And I remember you saying you don't like spicy foods, are there any types of seasonings you know you like (like Mexican flavours or garlicky things or things with a sweet flavour, for example)?

Oh thanks Athena, I forgot to say spicey I refuse to eat anything spicey. I love sweet flavors, I love kind of salty and I love savory flavors.

I don't know, I am so un experienced in different foods, but I know that indian food tends to be to spicy and I am such a whimp that I do not even like lots of table pepper. So things like papria and chilli powder an stuff would be out! !


I am supposed to shoot for 2k a day in calories, that can be split up however I like through out the day, no more than 65 carbs a meal, and my blood sugars should be no higher than 145 after meals, but if it was as low as 114 110 the doc would be thrilled. And she wants me to keep the sodium low. I forget the daily limit but I think daily limit was 200 to 600.

This is what I am cooking for dinner tonight:

slow cooker porkchops

I will add 1 cup of barley the last hour of cooking. Then add a salad or a cooked vegetable and I'm done.

The recipe calls for a variety of spices, if you don't have them or don't like them, use what you have or what you like.

I always have chicken broth and chicken stock around, I make my own. You can use the store bought or even the little broth squares, although those are high in sodium.

A good dinner doesn't have to involve lots of intricate food prep or be expensive. I bought 9 pork chops for under $5. No, they are not thick center cut ones, but they are boneless, with little fat, and will work just as well at 1/3 of the price.

My suggestion is spring rolls. Very healthy, very easy to tweak to your tastes. A little challenging the first time you do it but they look very impressive and you will feel proud of yourself.

No measurements here because spring roll wrappers vary in size and you will want to change things up to suit yourself. You won't need very much of anything. For two of us I use maybe one carrot, half a cup of noodles, half a cup of leafy veg etc

You need:
-A packet of spring roll wrappers
-Cooked chicken, shrimp, strips of beef, boiled egg or tofu (a little will go a long way)
-Lettuce (dark leaf variety), spinach, kale, or the leafy thing of your choice
-Carrot (shredded or chopped very fine), peppers (cut into strips), green onion, beansprouts, or some kind of crunchy veg
-Cooked noodles (glass noodles hold their shape best, but rice or egg noodles are fine)
-Optional herbs - cilantro or thai basil if you can get it
-Optionally pretty much any other veg you like - I've seen people use avocado for example

Soak the wrappers in warm water, one at a time, until soft. Lay the wrapper out, and at one side put a little of each ingredient. Roll. Eat. Use whatever combo of ingredients you like but try to get at least one thing from each category.

Alternatively, once rolled you can brush very lightly with oil, put them in the oven and bake until the wrapper is crispy.

It might look complicated but it is really simple. You can use leftover meat chopped up, and grating a carrot or slicing some peppers is easy. For the noodles - I usually put mine in a pan, cover with boiling water and put a lid on it, and just let it sit there until I've chopped my veg, then they are ready to be drained and used.

You don't deep fry them? I've always thought those were fried. The baked, crisped ones sound good though.

You can deep fry them, but of course that adds a lot of grease. But the ones which aren't crisped up make a lovely light summer supper.

I made something close to this and it was quick and easy. I couldn't find the original recipe I used, but this sounds like the same idea.

Quick and Easy Mexican Chicken

Original recipe makes 4 servings

4 skinless, boneless chicken breasts
cooking spray
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
1 pinch ground cumin
1 cup salsa
1 cup shredded Cheddar cheese

Directions

Preheat oven to 375 degrees F (190 degrees C).

Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste; place in hot skillet. Cook until brown on both sides and no longer pink, 10 to 15 minutes.

Transfer chicken to 9x13-inch baking dish or casserole dish, top with salsa and cheese, and bake in preheated oven until cheese is bubbly and starts to brown, 15 to 20 minutes.


Don't forget a salad to go with that

Scrambled eggs with veggies and maybe some cheese would be a good thing too.
If you like the tase, you can try an omlette the next time, making it a bit fancier.

Both versions are very variable. Use 2 eggs per person, bulk it up with whatever veggies you like and add a bit of cheese as a finishing touch. A healthy basic you can use often.

I suggest paste with chicken in a cream sauce.

What you do is that you take chicken breast and cut it into thumb size pieces and fry it up in a pan with a little butter in it, do not fry them to long for they will cook a bit with the pasta as well so you do not want them dry.

Now make some cream sauce of your choosing and cook some pasta, while it cooks cut up some paprika, leek and open a can og sweetcorn. Put the pasta, vegetables and chicken in a pan, add some salt and pepper and then pour over the sauce and let it simmer for a few minutes.

Serve this food with a fresh salad and some buttered bread on the side. Enjoy.

I'm making pizza tonight with garlic scape pesto, little prosciutto cubes, cheese. After it's baked I'll top it with pea shoots that have been dressed with lemon, olive oil, salt and pepper. 15 minutes and dinner is done!

Do you have a George Forman grill? the small ones are very reasonable. Also, buy those microwave steamable packages of veggies, (not the ones with cheese sauce)


Put 2 chicken breasts on the grill, some Mrs Dash of your choice, cook till done.
pop the veggie pack in microwave, cook as directed.
use some butter spray on the veggies when done, some more Mrs Dash spice to taste. Yum! ( "I can't believe it's not butter" is a great spray)
meal for 2 in under 20 min, very healthy.
low sodium, low carb, high protein, very filling.

uhm somewhere but it's been ages since I have used it, ido have a crock pot though and an electric skillet.

This was my dinner tonight:

A salad with baby spinach, mandarin oranges, almonds, steamed shrimp, strawberries with a dressing of balsamic vinegar and olive oil. And a dessert of Skyr yogurt (Icelandic yogurt) with some strawberries and granola and a glass of unsweetened iced tea with two small teaspoons of splenda and tons and tons of ice.

I just made a super easy meal of tacos with boca scrambles so they are meat free, healthy and delicious and inexpensive!! Add a bunch of fresh veggies and done!

I mAde scrambled eggs 2 eggs a bit of milk, a dash of garlic and tomatoes fresh from the garden. It was fabulous! And I am on my heart burn meds again, so I am comfortable having tomato's.

Also this veggie pizza with Daiya cheese with is non diary on a gluten free crust, veggies and roasted veggies, and again it's delicious, super healthy and inexpensive!
