In my case, when I'm on CM on my iPad, I can't access the CM chat due to some kind of Flash limitations from Apple. I tend to go to Yahoo after exchanging several emails and establishing at least a preliminary rapport with someone. You don't have to add them as a friend to chat, though. You can just message them; then, if the conversation goes well, you can add them as a friend.
You can also set up a bogus Yahoo account for your screen name. That way, if someone sells your Yahoo ID to spammers, the account is one you don't use anyway.
Yahoo IM has worked pretty well for me thus far.
