If you could cook anything tonight, what would it be?

We sit here every night trying to think of something to eat, if we don't go out. And it's literally a brain fart of dead ends. Help.


Update: we came up with battered chicken and fish with fries. But still ideas would be great.

Ribeye, salad and baked potato is always a favorite of mine. Easy and yummy.

Hlen, we started to fire up the grill, but decided it was late...and we were lazy,lol. But sounds great.

Chatter, that is a good choice but we ate steak all last week. He works out, so every three hours he eats meals or protein shakes. Damn near each meal is eye of round steak. It's the leanest.

I sometimes have the same problem but whenever I am not sure what to make I start browsing recipes and something is bound to leap off the page.

We are doing chicken cordon bleu (parmesan instead of bread crumbs), mushroom risotto and fresh green beans.

We're having Maurice Salad (my favorite) with Strawberry Shortcake for dessert (a favorite of everyone else in this house).

Usually, when I'm having trouble thinking of meals, I think of favorite ones at restaurants that we don't have often. Then, I find a copycat recipe online. I was so excited when I found the Maurice salad a few years ago (just had to tweak it a bit).

One of my new favourites is ribs cooked in a slow cooker. It doesn't help you tonight, but............
slice onion and put on bottom of the cooker , slice ribs into segments, rub in dry rib rub of your choice, and put meat on top of onions, add a little bbq sauce - we like sweet baby ray (?) original and cook for six to eight hours.

Even though there isn't much fluid initially, you'll end up with au juice. And my kids say its as good as restaurant ribs.
I got a full rack of ribs for $12 at Target - the one by St Vincent has food., and if you have the red card, you get 5% off your purchases. [:D]

Tonight I went out to eat with my mom for my birthday. We went to an Afghani restaurant where I had Salmon and it was over Pawal which is a curried jasmine (or basmati) rice that had steamed shredded carrots, raisins and almonds in it. It was yummy...lightly spiced. Had a lovely, warm flavor without being overpowered.

Yummy indeed!

Definitely beats my Cheerios and blueberries.

It's a worthy investment. I've thrown a few boneless, skinless chicken thighs into the slowcooker, poured a full bottle (8oz) of bbq sauce over them, and turned the cooker to high. About four hours later, I took the chicken out, pulled it apart and mixed it up with the sauce in the pot. Makes yummy sandwiches and, served with a salad, a great meal.

I had sweet and sour chicken with rice. The way I make it is in the oven and it's not covered in batter. It's a sauce made from vinegar, sugar, ketchup and soy sauce. I then put it over the chicken and bake. Yummy.

I always have a problem figuring out what to make for dinner. I usually will sit on the train on my way home from work and try to come up with something before I get home.


I like to check out Pinterest on my phone to come up with recipes.

I like "Gottago pasta". Cook up the pasta and check the fridge for stuff that's "gotta go". Saute up some tomatoes, spinach, can of chopped/minced clams, look in the pantry for other things to add.

It's a kind of "Chopped for Leftovers".

Almost anything that can be stuck on bamboo kebab sticks in any combination help make it more interesting.

Cubed steak, chicken, firm fish (salmon), thicker slices of zucchini and sweet vidalia onion, red pepper, whole mushrooms....whatever you've got.

Make the kebabs, pour any salad dressing you have sitting in the fridge to marinade it (up to a day ahead), then grill.
