Take four pieces of one-foot-square half-inch plywood.  Drill a hole through the middles, put pieces of 18-inch-long rope through the holes and tie a knot in one end.

At the beach bury the boards about a foot deep.  Tie someone to the pieces of rope so they are spread eagled.

OHHH, you meant food????

Visit the Colonel (Kentucky Fried Chicken) on the way to the beach... or use a good cooler and fix any cold dishes you wish. Go for finger or hand type foods, sandwiches/subs, salami, cheese, wine... and oh yeah, don't forget the grapes or the whipped cream!

well the wine is a nogo as alcohol is forbidden on our public beaches

Can you cook at the beach? That opens more possibilities. How fancy do you want to go?
Cheeses keep fine in a cooler with a minimum of ice. Buy a selection of presliced cold cuts that are vacuum sealed. Deli macaroni and potatoe salads etc, unopened till you are ready to eat.  Sausage meats. Pudding!!!!
Dried fuit mix.
You can buy larger sections of cured meats, sausage etc that are sealed, and slice them there.

Try to stick with vacuum sealed. The cooling level is not as vital.

Lifeguard:  gee maam... that's some funny looking gatoraid you got there...

I've taken premixed cocktails, wine and other spirits in gatoraid bottles, very handy screw on lids.

Plastic cups and violla... your own gatoraid blend hit's the spot.

Nowadays I'm a good boy and no longer consume alcohol so my gatoraid is real, lol

well the problem is more people signed up for this gathering than i anticipated. i had planned for 20 or so, over 50 signed up!!! lol i dont know. i need something that isnt too hard

Hey

Take some plastic bottles or juice in their containers and freeze them - use for cooling until eating time.

That should keep any cold dish - or a hot fresh until eating/heating time....

Bread or crackers is good accessory, won't spoil with a little heat.

Fish and shell-fish is probably the best for the location, but wont be good is the cooling is not satisfactory.

What time of day? How many persons? Should it be heated?

3pm     52 persons so far. it is a gathering for people from a dating site. i dont care if the foods heated or not im just looking to have somethint to take

The recipes are scaled for 2 people, but you can easily up the quantities.  Two other good reference sites for menus and recipes are www.epicurious.com  (Gourmet magazine - will have lots of good suggestions) and www.foodtv.com  (Food Network's homepage) if you are looking for something a bit different.  Do a search on picnic menus.

I always think a mixed fresh fruit salad is awsome when its hot.......usually no worries about food poisoning either

Any kind of non mayo based pasta salad.
If you can cook on the beach...it's hard to beat burgers and dogs.

How long will you be there, what sort of meal/snacks are you preparing and what time of day/night?

I'd say go to foodtv.com, Semi-Homemade just did a few shows about actually cooking on the beach and might have some great ideas for you there.  (Yes, I'm a Food Network addict)

Otherwise, yeah, just go buy the KFC stuff and not worry about it.  And smore fixins too.

Ahh, the mayo myth persists.

Modern mayonnaise isn't an issue when it comes to picnics - commercially made mayo does not contain raw egg, which was the issue previously when it came to potato salad sitting out. 

Now, the reality is that ANY food is going to break down if it's left in less than ideal conditions, and all bacteria loves warm and humid weather.   Whether it's a mayo based salad or a vinaigrette, it's not going to taste too good after sitting in the heat and humidity for a couple hours.   If you're doing a buffet to nosh on over a period of time, put out small quantities at a time, keep extras on ice, and refresh the buffet every so often.

If it's a bunch of people coming and you don't have enough coolers, ask people to bring coolers filled with ice to help keep food and bev at appropriate temperatures.

Snicker’s Salad

Mix together:
1-     8oz pkg. cream cheese softened
1-     12 oz container Cool Whip (thawed)
2-     1 C powdered sugar

Add in:
    6 chopped Snicker’s bars
    6 diced Granny Smith apples

Store in fridge or cooler.

I love to bring a big bowl of whole cherry tomatoes and basil to snack on.  If you wanted, you could toss it with some olive oil, balsamic and salt, but then it stops being finger food.
