I agree with the folks above to let her choose.

That said, I bought 'Orgreenics' at Bed Bath Beyond (be sure to use those 20% and $5 off coupons they keep sending!) to replace my Teflon pan. I like them very much. They work even better than Teflon for nonstick qualities and are supposedly healthier.

I've had it for about 2 years and the coating is holding up fine. I did get it at Sam's Club, where you can often find great items much cheaper than retail.

HHmm I might have paid up to $70 for it, I don't think I paid more than that though.

I want to get the orgeenic skillet for Mom. we have 2 non-stick skillets, a stainless steel skillet and an iron skillet. Pots are a mixture of different sets (mainly what we buy from garage sales and thrift stores). I want the flap jack skillet for myself (I love chocolate chip pancakes).

Fast reply

For those who own pet birds, be very careful about Teflon coated cookware. If the cookware gets overheated it emits a gas that can actually kill your pet bird.

First I want to thank you all for your feedback. In an effort to communicate better with you, I have done a little research about cookware.

The Victim


My slave called the victim of my abuse (the burnt pan, not my slave) a 5 quart chicken fryer. All the chicken fryers I found have flared sides. So it's like Chef's pan with straight sides or a 2 1/2 inch deep Sautéing Pan. They have a pan called a Jumbo Cooker that has straight sides and the extra handle just like it.

This one has a handle. Note the price difference.

Also, they call it a deep saute pan, which is what I would call it. (Not a fry pan).

My suggestion:

Order her to go find a replacement, "Take the credit card and go find a replacement. Do not come back without one." She'll get the double gift of a replacement pan and being dominated.

No Cast Iron
But thank you for the suggestions. Her 12 inch stainless steel pan weighs 4lbs 12 oz (yes I actually weighed it). It isn't the weight that she doesn't like about cast iron. She doesn't like them because for her, food sticks to them. Me, I love cast iron and as mentioned, "I have cast iron pans, but she isn't too fond of cooking in them.” I have had Griswold, Wagner and some vintage Benjamin Medwin pans from my grandmother.

I also recall her mentioning (yes, I actually remember things my slave says about her preferences) that the cast iron doesn't heat up the same as her stainless steel pan did. I think I figured out why. Some cast iron pans (my Griswalds) have a raised ring/ridge on the bottom.


Over a gas flame or nestled flat onto a samller electric coil, it has full contact with the heat. But on our glass top stove, 99% of the pan doesn't contact the cooktop like the flat bottom of her stainless steel pan does. I think this is why the pans don't work as well for her. She puts the food in too early because her internal timer is set to when the steel pan is ready and the iron takes longer to reach a good cooking temperature.

Cast iron does take longer to heat up. I'm getting old enough that the weight of mine is now becoming an issue.

The All Clad, stainless over copper, is an awesome pan and personally I would love to find it under the tree.

However, I would take her to the nearest restaurant supply house and let her try them out. Different pans balance differently, not so much a good/bad issue as just what feels good in your hand.

I am using the old pan as a reference and doing the footwork online. Since so many of the really good pans have metal handles, I may just end up asking for her input about it. Thanks for the suggestions and the Orgreenics tip.

Thank you for the ceramic tip. Paula Deen makes a gorgeous line of ceramic pots. I saw them in person at her store when we ate at in her restaurant. They seemed like really nice quality for reasonable prices. Our accent color in the house is red so a red ceramic pan would look very nice. She makes a 12' chicken fryer for $70 on sale for around $50.

The non-stick aspect on stainless with thermal handle has been a taller order to fill. However, you seem to have found a real nice pan with five bonded layers - two of which are aluminum for even heating, dripless pouring and stay-cool handle. Nice find. Thank you.

RS, I have a similar version of this Calphalon non-stick 12-in pan and it has held up very nicely for 18 mos. now.
I've only used plastic utensils on it, and have not put it in the dishwasher.
