I got my first frying pan with ceramic coating a year ago. Loved it so much that I gave away my expensive frying pans. Living in a motor home you only have room for so much stuff. The Calphalon pans are real nice. The high end stuff is $149.00 for a 12' omelet pan and low end stuff is about $49.00 a pan. That said, I bought 'Orgreenics' at Bed Bath Beyond (be sure to use those 20% and $5 off coupons they keep sending!) to replace my Teflon pan. I like them very much. They work even better than Teflon for nonstick qualities and are supposedly healthier. I am using the old pan as a reference and doing the footwork online. I do think it's very sweet you want to buy it as a gift. My mom taught me to cook on the Revere Ware copper bottom pans. If I were to go outside that, I'd get a cast iron like the others recommended, but that's just me. Non stick is mostly good for cooking fish and eggs so you don't need much more than a pan shaped object with a resin coating. Since all the coatings wear out I'd go for restaurant grade. Last time I bought them I got 4 omelette pans for around $15 each. Thanks for the good idea. Unfortunately I am not close to a city so no restaurant supply house handy. ORIGINAL: DOM68005 I bought the NuWave skillet (with a nonstick surface) system thinking it would give me temperature controls that my stovetop skillet does not. One of them burned the nonstick surface IMO when I set it at top temperature to cook a steak. I know the nonstick surface changed color. The company sold it with a one year warranty. When I wrote them they sent me instructions on seasoning the pan, but failed to live up to the advertised guarantee. It has been a bad choice as far as I am concerned. Thanks for the warning about Nuwave.
