There is one held in the Panera's in Poughkeepsie on Thursday evenings. Not swearing to Thursday though. ETA: Used to be at Panera's, now at Perkins in Wappingers.
But the HV stretches from Yonkers to Albany, and that covers a lot of ground. Are you sure there isn't one near you now?
The best place I know to search for existing munches is at fetlife.
Otherwise, why do you need a co-host? Just announce that you'll be at the food court wearing a red carnation (or wherever) and hope someone turns up. Usually it takes months before you start getting more than a couple of people.
You find people interested in starting new events by going out into the already existing community and meeting like minded folks. Lets say you want to restrict this to FLRs, then you would ask anybody you know and like who is into that to do so.
If it's just that the existing munch is midweek and you think a weekend would be more appropriate, find someone else who complains they can't hit the Thursday one because of work and ask them.
