I was just sitting around at home, and decided I was hungry.  So, as I often do, I grabbed a mango, peeled it, and cut off a chunk to eat it, just like that.

Turns out this mango was VERY underripe.  So, rather than throw out a perfectly good mango, I figured I'd flambée it. 

I had never flambéed mango before, and this was very ad hoc, so I just grabbed what liqueurs I had in house with a "what have I to lose" attitude.

I caramelised some sugar, added butter, tossed in the sliced mango, added Malibu, Amaretto and peach schnapps, let that simmer, 1/2 oz of rum and lit it, let it sit a minute, et voilà!  Not $2 in cost and 10 minutes of work, and I am telling you, I have never had a better dessert!

And hell, who can say no to a bit of fire play on a Wednesday night?

Sounds awesome, i love mangoes so i'm gonna try it. Maybe i can talk my pair into trying it; i made Bananas Foster one day and Scooter loved it.

Well, it's not so much a recipe as it is a basic idea of what I did.  A recipe would have amounts, times, and other irrelevant BS.

I really just grabbed what I wanted off a shelf and poured the amount I thought was right.  So your version may end up tasting horrid....

That sounds wonderful benji.I love to cook, benji, and I especially like baking.

I would have to say for me, I especially love baking Cookies. I can deal with and invent impromptu recipes, but here is what I especially love to do:

Every late October, around Hallowe'en, I start making at least 40-45 dozen Christmas cookies of all shapes and sizes, which I freeze, and then give away to neighbors and friends closer to Christmas. I also make fudge and banana-nut bread.
Each recipient usually receives:

2-2-1/2 dozen cookies (6-8 of 4 different kinds)
1-2 pounds of chocolate fudge
1/2 a pound of hard candy
1 mini loaf of banana pecan-walnut bread
Plus, some trinket, like a Christmas ornament for their Christmas tree

I wrap all of the baked things up in decorated sacks and colored foil, and put them in holiday gift bags, and get in my car and deliver them to people.

I've been doing this for 12 years now. It has reached the point where people ask me: "When are you going to be making those cookies and especially that fudge"? People really love the fudge, especially. My dad is a real nag about it now (in a pathetically cute way), if he doesn't get his gift bag by about the 10th of December.

The funny thing is, I don't spend all that much money doing it - maybe $10-12 for each gift bag. But it's a LOT of fun. I am not bragging (or trying not to). I just enjoy it. I started one year - and now I can't seem to stop (somebody help meee.... [:D]!

It's also the reason my pet dogs (especially my Beagle) are soooo fat. They are my main cookie dough taste-testers. So far, they have never rejected a thing!

I am not joking; in the early years, my (then) little Beagle pup, Oscar, would sit at the end of the kitchen counter staring up at me with those puppy dog eyes like I was Einstein inventing relativity or something, in the kitchen. I just could not resist those eyes. I swear he gained 5 or 6 pounds in about 3 days while I was making cookies. And he's gotten fatter every Christmas season since then, too.
But, he is very, very happy (and well fed). Rufus likes cookie dough, too, but he isn't as fat, since he is much more active than Oscar.

Stopped at the farm stand today (they are everywhere down here) and bought WAY too many peaches.

The result?   Peach coconut rum sorbet is in the freezer. Mmmmmm.....

Peel and slice 7 or 8 ripe peaches....add 1 can Coco Lopez cream of coconut.....a couple tablespoons of rum...puree until smooth in the food processor...chill...run through ice cream maker.

My favourite so far......... a cheesecake with dark chocolate and red raspberry sauce swirled in........heaven. Almost better than sex........from what I can remember....

Speaking of peaches......guess what I will be doing this next weekend. Picking and freezing, picking and freezing. Peaches everywhere!

Damn you Benji.  I just started a diet this morning.
Now all I can think about is a nice big slice of creamy, NY style cheesecake.
Plain, of course.  And a cup of coffee.  Light and sweet.

Ah yes nothing like flaming desserts to get my kink going. When I was an aprentice pastry chef, I would make extra money waiting tables at night at a very exclusive five star restaurant. I would always volunteer to be the one to make the Bananas Foster or the Cherries jubilee at the tables. I have a MAJOR food fetish and I definitely love fire play so I was happy as I could be flambe'ing all of the desserts.
As a pastry chef I did not get to Flambe' as much anymore but I did get to make wonderful desserts and pastries. One of my favorites is a Frangipan and pear torte.
Start with a large tart pan and line with a sweet pastry dough, Take fresh pears and score a samll X in the bottom of the pear, not too deep just enough to score the skin.  Blanche in hot water until the skin around the area where you scoredit starts to come off of the fruit. Cool the blanched pears in ice water until they are cool, then cut the pear in half thru the center. Using a melon scoop take out the center seed pod and then carefully remive the stem and stem line. Carefully peel the skin off the fruit. Place peeled fruit cut side down on a cutting board and then slice from the top down thru the length of the pear into 1/8" slices being careful to remain even adn consistent in your slice.Do not allow slices to get misaligned with the remainder of the sliced pear. Place the sliced pears wiht the thicker side outward on the sweet dough in the tart pan and press down slightly to one side to allow the pear to fan slightly in the pan. After filling the bottom of the tart pan with pears mix a basic frangipan and then pour over the pears filling the pan to within an 1/8" of the top.  Carefully place in the center of a 300 degree oven and bake until the frangipan is firm and lightly browned all the way around. Remove fromt he oven and then while still warm coat with a fine apricot glaze to give the pastry a sheen.
this may be served wiht a nice syrup made with Chambord liqueor and a simple syrup. Use a little corn surup in it as well to keep it from crystalizing. Bon Apetit!

I have a terrible weakness for anything cheesecake and especially with Chocolate and Raspberry Yummy

Speaking of great desserts, I normally don't do the "store bought" thing as I love to bake and create in the kitchen....but I found a cake at Gordon's Food Service that is......mmmmmmmmmmmmm. It's made by Jon Donaire and it's an Amaretto Biscotte Torte. Kind of costly....about 15 bucks....but it's worth it when you don't have time to fuss and need to take something to an event.

While I don't like mango, amaretto, or alcohol, that does sound like a perfect dessert for someone not as picky as myself and I will spread that recipe around!

As for cookies I like Toll House and Oatmeal with almonds or with raisins.
For dessert, Boston Cream Pie, Strawberry Shortcake and anything with peaches in it!
Unfortunately, I have a wicked sweet tooth so sometimes I have to put in an extra half hour on the treadmill.
Oh, and DONUTS! Anykind! And M&M peanuts
I used to bake Pineapple Upside Down Cakes! I'd use the pineapple juice in the can and pour it in the batter to give it that real pineapple taste.
And I like those big apple pies that stand about 5 inches high.
And don't get me talking about ECLAIRS!
