I was just sitting around at home, and decided I was hungry. So, as I often do, I grabbed a mango, peeled it, and cut off a chunk to eat it, just like that. Turns out this mango was VERY underripe. So, rather than throw out a perfectly good mango, I figured I'd flambée it. I had never flambéed mango before, and this was very ad hoc, so I just grabbed what liqueurs I had in house with a "what have I to lose" attitude. I caramelised some sugar, added butter, tossed in the sliced mango, added Malibu, Amaretto and peach schnapps, let that simmer, 1/2 oz of rum and lit it, let it sit a minute, et voilà! Not $2 in cost and 10 minutes of work, and I am telling you, I have never had a better dessert! And hell, who can say no to a bit of fire play on a Wednesday night? Yours, benji
