Status: offline 		Actually raw ham hocks are usually totally saturated with PIG FAT... and what is the butter for... is it garnish?

Do your health and your arteries a favor.... season your collards with some smoked pork chops and limit butter use only to your cornbread. Smoked porkchops and ham hocks are far better for seasoning "greens"... including pole beans... yum!

Status: offline 		Actually I season my greens with a little liquid smoke, sugar and onions then I mix the collards with some turnip and mustard greens to give them a little different flavor.  I can't imagine what the butter would be for except for the cornbread but if you mash the cornbread up in the greens and eat it that way, there is no need for butter.

Status: offline 		Collard greens and cornbread are staples in Southern US cooking. Cornbread is a bread made from corn meal. I don't know what a trotter is, but here's info on a ham hock. Liquid smoke is a seasoning and mustard greens are the leaves produced by a mustard plant.

Honestly, I don't understand why so many people make such a big deal of it on this site.  And, for that matter, getting collard for more than a week just seems, well, unhealthy.
