I was drinking 2 or more quarts of coffee a day when I was living the sleepless life of working as a computer engineer and trying to get into the longshoremans union. When I got in, I quit coffee cold turkey. Maddening headaches for several weeks, insomnia, fuzzy headedness, grumpiness. I was not really over it for almost a month. I was on a medication back in the early 1990s which I tapered off over 2 months. It had all sorts of really bad side effects of quitting that one, including bugs under the skin, insomnia, narcolepsy, extreme mood swings, etc. I would have occaisional relapses months later because I was exercising like a fiend to get back in shape and it would unlock some from fat cells. Technically, the first 72 hours are all in your head as well. As Morpheus said "What is reality? It is electrical impulses interpreted by your brain." Just me, could be wrong, but there you go.
