I have played with stinging nettles in the past and found them to be marvellously wicked things, great fun. 

I picked some yesterday and threw them in a bag a few hours before they were due to be needed.  However, when we got them out they were all a bit crushed, wilted and totally lacking their sting.  Very disappointing indeed.  I had checked the strength of their sting when I picked them, and it was pretty potent then.  I'm not clear if the loss of sting was because they were crushed or because they had dried out a bit. 

My question is this: how does one harvest, store and transport nettles if one can't use them immediately when fresh ?

You could try treating them like any flora and put them in water...
I'd suggest wrap them in a bag ( for transport) with the stems sticking out and put the stems in those little plastic tubes with rubber stoppers that you often get on orchids etc...
it's water going up the capillaries in the stems that keep plant matter from wilting..

We used to transport cut flowers from Holland to the UK by refrigerated trailer - the temp setting I think was +5 celsius. Maybe that would work for nettles too? - put them in a domestric fridge or a picnic coolbox.

Place them in paper bags as well -
 
The condensation of the expiration from the flower itself, the humidity falling out and the heat build up inside of a platic bag will wilt them faster.

Here is an idea for you, go buy a big pot, put rocks in the bottom two inches for drainage, use good quality potting soil and dig a few up.

Fresh all the time.

As Lady Ellen said ......and also wrapping the cut stem ends in heavily soaked kitchen-tissue, then slip in a plastic bag with an elastic band to secure.

I have a big garden and I hate nettles.  After a few very painful, sore experiences I made SURE that my garden was totally clear of them. It took many hours of diligently digging up roots and monitoring every damn inch of soil regularly............only to discover that my Master was perfectly happy to leap the garden fence and harvest them from my neighbours garden.

I give up.

A friend of mine spent weeks eradicating them from the huge garden around his pool prior to putting his country house up for sale. A couple from the city bought it and being a nice guy he agreed to come help them shut down the pool the first time so that he could show them how.
 
The time came and i went along for the ride. We get there and the beaming couple drags us to the pool area because so many of their friends had admired the unusual exotic planting around their pool and they were dying to know what it was.
 
Lmao...you guessed it, the damn nettles were back and doing well due to all the loving care lavished on them by this couple.

Nettles make a very good steamed vegetable and are very high in vitamins, the steaming takes the sting away completely.  They also are used in a tea but I am unfamiliar with how they do that.

I get mine from my mother's garden, she grows them on purpose.
