Chicken or Pork Casserole

Depending on the size of the casserole dish..is how much meat you add. Let's go with a 9x14

Whole chicken cut up
Pork chops..however many you can fit..or want
1 can of cream of chicken soup (chicken)
1can of cream of mushroom soup (chicken or Pork chop)
1 can of cream of celery (porkchop)
2 cups of rice
1 onion chopped
Carrots shredded ( depending on the size...enough to cover the bottom of the pan nicely)
Celery shredded ( note the above)

Layer the carrots  and celery on the bottom of the pan..then layer with onion.
Place chicken on top. If using pork chops..lightly brown first..then place on top of rice.
Take soup and mix with a can of water (each) and pour over meat.
Bake in 350 degree oven for approximately an hr.
Will be done when rice is cooked .
Keep an eye on the rice..may have to add more water.
Place foil over for the first 30 min.
Remove and finish cooking.

Clear as mud?

Super Easy Sweet & Sour Meatballs

1 bag (2.5 lbs) pre-cooked meatballs (it's ok to use them frozen)
1 jar grape jelly (12 oz)
1 bottle Heinz chili sauce (12 oz)

Throw everything into a crock pot on low and just let it cook all day. Stir before serving. Serve with minute rice.

You can substitute cocktail weiners for the meatballs.

Boil 5-6 Brats in 2 bottles of beer for 20 mins then pop under the broiler for a few minutes, turning as needed to brown all sides. Serve on toasted buns with favorite cheese.

I used to make this years ago..altho I made my own meatballs.

A very simple and cheap meal to make.

Casserole dish required

Put a layer of sliced potatoes in the dish, followed by a layer of sliced onions, then a layer of bacon, then another layer of potatoes, then onions, then bacon...and so on, until you have the desired amount. 
Cover and put it in the oven - I put it in on 200 setting (then again everything goes in at that in my house lol).
Cook until it browns slightly.  Sorry I dont have any proper cooking times or heat settings but its just one of those dishes that I used to see my mum cook - never saw it written down.

Its nice with cheese added through it too.

Why a roasting pan? Crock Pots are easier, less messy, and make every roast perfect.

Just for the time factor. You can make that same recipe in a crock pot but it takes 5 to 6 hours tp come out as good.

In addition to the advice on getting a church cookbook (they really are the best, I have about 10) there is one called the More With Less Cookbook and you can get it at most large bookstores (although they may have to order it).  It has been a tradition in my family that whenever someone gets married the woman of the new household gets a copy of this book (I am recently engaged and am eagerly awaiting mine).  It has simple, time-saving dishes, freezer meals, bases (make this base and you can make these four meals from it) and they are very easy.

Peppercorn pork roast.
 
Buy a premarinated peppercorn (or use a garlic one if you prefer) tenderloin pork roast, put it in the crock pot, add potatoes, carrots, onions, you can also add mushrooms or zucchini if you like, cover with water, set to high. Do this in the morning, that evening you will have a wonderful meal and only one dirty pot.

The leftover meat makes awesome sandwiches.

the Owner loves brats but which ones should I buy for that recipe? There are ones that say 'beer brats' on them. Also does which brand beer matter? Do you boil it in beer and water or just beer?

I am also going to try out the meatball recipe that sounds so yummy!

OK bear with me here, this might be a little long.  I'm giving quick, easy and cheap meals to my unmentionables all the time.  If you need any more, just let me know.

Chicken Pot Pie
Frozen pie crust deep style (2 in pkg)
Large can of chicken breast 12.5 oz
2 cans of Veg all
1 can of condensed cream of chick soup

preheat oven 350
let pie crust thaw 10 min
place chicken in bowl break up with fork (leave broth)
mix with cream chick soup
Drain water in veg all, mix all
Pour into one pie crust, then put second on top,  press crust together,
Cut 2 lines in middle for ventilation
Bake 20- 25 mins

Chicken Alfredo
2 pkgs, Lipton noodles in sauce Alfredo
12 oz perdue short cut precooked sliced grilled chicken breast
1 pkg frozen Birds eye all seasoned vegetables (not with cheese)

Microwave or cook the vegetables in separate dish (as directed on package)
Follow package directions for Alfredo noodles
After noodles are finished, add chicken and Vegetables

Salisbury Steak
1 large jar of brown gravy
Lipton powdered onion soup (in box)
1 pound of Hamburger meat
1 egg
Italian seasoned bread crumbs 1 ½ cups
Mix all then make small patties
Little olive oil in skillet /med heat cook patties for 10 minutes on each side
Add gravy simmer for 10 more minutes
Great with noodles or mash taters
------------------------------------
Chicken Enchiladas
Preheat oven 350
Requires baking dish or pan
El Paso microwave taco chicken
Corn or Flour tortillas 8 - 10
Enchilada mix (in can or powder follow directions)
Shredded chedder cheese

Microwave chicken ½ time as directed
4 spoons of enchilada sauce bottom of baking pan
Dip the tortillas in Enchilada sauce
2 -3 tbls of chicken in each tortilla, top with cheese roll bending ends over
place individually in pan
Top with remaining sauce more cheese on top
Bake for 20 minutes
Serve with sour cream / tomato / lettuce
Side with Liptons Rice & Sauce Spanish Style (prepare as directed, and/or add a can of Hormel chili no beans for extra flavor)

 
None of these should take more than 30 minutes from fridge to table.

I have never seen chicken breasts in a can. What grocery is that at? I have seen the pre-cooked stuff in a pouch but it can be pricey.

It is in the same section of the store as the tuna fish, look for Swanson's chunl chicken breast.

Basically any kind of brats (except the ones which are stuffed with cheese). Himself likes turkey brats, but beer brats work well and I've made the same thing with Italian sausage. I'll add a bit of water only if I don't have enough beer to cover the brats so they can boil for 20 mins. Two bottles for 5-6 brats usually works really well though.

As far as brand, I'm not sure where you live, so don't know what brands you have out there, but I'm generally brand loyal and use Hormel if it's available or Jennie-O Turkey Brats if we're trying for a healthier meal. For the meatballs, I like the Simek's. And, yes, the meatballs are yummy and so quick and easy! :D

Yummy Cheesy Tomaters!

1 can whole tomatos
1/4 c. grated (fresh!) parmesan cheese
Butter

Drain liquid from tomatos. (Don't throw the juice out, it's great to use in another dish!)
Cut tomatos lengthwise in half and place in shallow baking dish. Place a small pat of butter on each half then cover each half with grated cheese. Bake at 375 degrees for about 15 mins or until tops are brown. Great little side dish and good enough to serve to company! Serves 4

Super Easy Chocolate Sauce

12 oz dark chocolate
1/4 cup heavy cream

Melt chocolate and cream together in a glass bowl set over boiling water stirring to mix as the chocolate melts. (Don't let the glass touch the water though! Just enough in the bottom of the pan to create the heat. It won't take long to melt the chocolate.)

Dip fresh, whole strawberries (with stems!) into chocolate leaving about 1/4 of the berry exposed at the top where the stem is and set aside to cool.

Drizzle melted white chocolate over the dark chocolate for a visual sparkle. Yummy and romantic!

Banana split cake
( use a cake pan for this )

grahmn crackers ground up ( make according to box for crust )
layer of sliced banana's
layer of banana pudding
layer of strawberries
layer of pudding (any flavor you like )
Layer of (any other fruit you would like )
Layer of whipped cream
topped with cherries
and drizzled with chocolate or fudge or caramal

for the chocolate sauce, do you have to use dark chocolate? or can i use milk chocolate?
