This is one of my favorites....YUM!!!

Kentucky Hot Browns Recipe

8 thick white bread slices
1 lb. roasted turkey slices
Cheese Sauce (see below)
1 C. shredded Parmesan cheese
1 lb bacon cooked and crumbled
2 large tomatoes diced

Place bread on a baking sheet, and broil 3 inches from heat until toasted, turning once.

Arrange 2 bread slices in each of 4 lightly greased individual baking dishes. Top bread evenly with turkey. Pour hot Cheese Sauce evenly over turkey, and sprinkle with Parmesan cheese.

Broil 6 inches from heat 4 minutes or until bubbly and lightly browned; remove from oven. Top evenly with bacon and tomato. Serve immediately.

Note: A lightly greased 15- x 10-inch jellyroll pan may be substituted for individual baking dishes. Arrange bread slices evenly in bottom of pan. Top evenly with turkey and Cheese Sauce; sprinkle with Parmesan cheese. Proceed with recipe as directed.

Cheese Sauce:
Makes about 4 cups

1/2 C. butter or margarine
1/3 C. all-purpose flour
3 1/2 C. milk
1/2 C. shredded Parmesan cheese
1/4 t. salt
1/4 t. pepper

Melt butter in a 3-quart saucepan over medium-high heat. Whisk in flour, and cook, whisking constantly, 1 minute. Gradually whisk in milk. Bring to a boil, and cook, whisking constantly, 1 to 2 minutes or until thickened. Whisk in cheese, salt, and pepper. Remove from heat.  Serves 4.

Only one thing to do with leftover turkey...

The Turkey Sandwich.

Should involve all of the following: french stick (the doughy, overnight sort), crispy bacon, mayo, mustard, pepper, crisp salad, bread sauce, cranberry sauce, leftover gravy, turkey meat (light and dark), crispy turkey skin... and anything else to hand (small children, coal etc.)

Classically, I construct it and wrap it tightly in clingfilm to maintain structural integrity whilst gorging [sm=applause.gif]

That's what Master likes done with it, minus the turkey skin.

I had a traditional Czech stew with dumplings, in a traditional Czech restaurant...

It came with spraycream and jam on top. (To the letter, but not, somehow, in the spirit)

Damn Mist....

That sounds hella good, but I think all those calories could turn the wrong person into a slug. I'd make plans for 45 mins worth of wind sprints a few hours afterwards  ; }

Other than that, I divide into small bags then freeze later it use it to up make soups, or put it in salad.  After about day two, I don't want to see another piece of Turkey till the next holiday.

Fresh baked bread (ok, bread machine bread), lightly toasted, a little butter, turkey (white meat only), lettice and tomato.
 
Unfortunately, someone here decided to try a turducken stuffed with wild rice this year, and it was kinda gross. We may have screwed up the cooking part ... our usual holiday meal cook isn't yet able to do such things, and I'm a crummy alternative to an actual cook. We ended up throwing some chicken breasts on the grill and eating those with our sides. The cats liked this idea, because they kicked the shit out of the turducken. The whole family pride is beached on the cool tile floor.

Turkey ala King

1/4 cup butter or margerine
1/2 cup chopped green pepper
4 ounces sliced mushrooms
1/4 cup flour
1 1/2 cups milk
1 can (10 3/4 ounces) condensed cream of mushroom soup
1 jar (2 ounces) pimiento strips or chopped
2 1/2 cups cooked cubed turkey
small onion -finley diced
salt and pepper to taste

Melt butter; add green pepper and mushrooms. Cover and simmer 5 minutes. Remove vegetables with slotted spoon. Add flour to butter, cooking and stirring until smooth. Add milk and cream of mushroom soup, stirring until smooth and thickened.
Add turkey, pimiento, mushrooms, green pepper, and seasonings.

I like to serve this over puff pastry shells, but it is yummy over toast also.  Some like it served over rice.

Of course after that I like to make turkey soup.

Ohhhh this is a new one I just got and it sounds awesome! I'm going to have to give this one a try! I think that I will add some chopped green chilies and substitute that new Southwestern Pepper Jack Cheese soup for the cream of chicken though.

TURKEY ENCHILADAS WITH OLIVES - Serves: 4

One with a Mexican flair. Serve this
with guacamole, sour cream, salsa & other Mexican fare for
a grand lunch or dinner.

3 tbsp butter or margarine
2 cups fresh mushrooms, sliced
1/2 cup onion, chopped
3 cups cooked turkey, chopped
1 can cream of chicken soup, undiluted
1 cup sour cream
1/2 cup pimento-stuffed olives
1/2 cup toasted almond slivers
2 tsp chili powder
8 corn tortillas
oil
1/2 cup cheddar cheese, grated

Melt butter in a large saucepan. Add mushrooms and
onion; saute' until onion is tender. Remove from heat and
stir in turkey, undiluted soup, sour cream, olives, almonds
and chili powder.
Briefly cook tortillas in hot oil until softened; drain
on paper towels.
Place 1/3 Cup turkey mixture in center of each tortilla.
Bring opposite sides of each tortilla up over turkey
mixture overlapping edges at center. Arrange, seamside
down, on a greased 9x13 and a 8x8 baking dish. Spoon
remaining turkey mixture down center of each enchilada.
Sprinkle cheese on top.
Bake @ 400~ for 25 minutes until hot. May take longer
depending on oven.

Turkey Soup is my favorite. I make enough to freeze and enjoy it all winter, and it's very healthy made with brown rice or another whole grain and lots of veggies.

Well, I cook in many different ways that showcases my domestic abilities.


Ok I give. I eat it cold late at night and give the parts I don't want to my cats.
