I voted for Chocolate Mousse... topped with some fresh whipped cream and some raspberries.... mmmm

I find souffle to be a lot of work for nothing and a tad bit dissappointing most times... well, except the cheese kind -- in my opinion of course.

I like fresh berries/whipped cream on chocolate deserts, looks nice too...

Is He a chocolate fan?

If you care to figure out the metric conversion, I have this relatively easy recipe from Switzerland... it's like a fluffy brownie, quite tastey... and would also lend itself to some fancy toppings like powdered sugar and chopped nuts or fresh whipped cream/berries.

edited to take out the recipe so I don't clog up your post with a cake recipe ... lol... you can email me if you'd like it [;)]

He is hit or miss on the chocolate, but i happen to know He is a fan of both desserts - but not a cake Man. unless its carrot - which lucky for me is my fave too [:D]

i did that a lot in the fall [i am actually making NY style strawberry cheesecake bars on saturday]

my signature cheesecake is of course pumpkin cheesecake mmmm

No, I wish I could say I have but I haven't gotten around to it yet.  Even if you have a mousse you are comfortable making already, you could just steal the chocolate collar part, and fill with your own mousse.  I did watch the show, and it seemed easy enough.

chocolate, a dark one at least is fine for a diet, supressing appetite, high in antiodidents but calories too.

Make the Mousse but do an elegant presentation.
 
Pick out a nice small dessert bowl, turn it upside down and butter the bottom of it, put it in the freezer while you do the next step. Melt semisweet chocolate in your microwave with a teaspoon of shortening until just melted. Now slowly pour the melted chocolate over the bowl.
 
Pop it back in the freezer until the chocolate is hard. Turn the bowl upside right and gently tap on the inside, this will cause the chocolate on the outside to come off.
 
Tadah, now you have a chocolate bowl to serve the mousse in.
 
Puree some raspberries with a little sugar, put it in a ziploc bag, now snip a corner of the bag.
 
On a desert plate make a flower pattern by overlapping heart shapes out of the puree. Sit your chocolate bowl in the middle, fill with your mousse, now top with home made whipped creme and either a few fresh raspberries or a strawberry dipped in chocolate.

I would go with the chocolate mousse..to make it extra-decadant, spring for 80% dark Valrhona chocolate, which is arguably the best on the market right now.  It's pricey - a 3 ounce bar is about $4....but worth it as an occassional treat.     A nice complement for chocolate is to make it with just a splash of Kahlua or Starbucks liquor, although you could use others.  Remember that liquors add sweetness so cut a little bit of the sugar out of the recipe so it won't be over-sweet.

Probably my favorite way to serve a very very dark chocolate mousse is in a wineglass topped with an unsweetened whipped cream and garnished with a couple raspberries or "fanned" strawberry.  If you're culinary-minded, an ultra thin slice of flourless chocolate torte topped with a quenelle of chocolate mousse, a quenelle of whipped cream, and served on a pool of creme anglais or raspberry sauce is out of this world. 

If you're doing "production" with chocolate - whether baking a cake, cooking, making a mousse or souffle - buy chocolate that is DARKER than you normally like.  When you add other ingredients (heavy cream, sugar, etc) it will lighten and sweeten the chocolate.   80% Valrhona is great for special occasions...otherwise, I like Trader Joe's Pounder Plus 72% Dark - at 3.99 for a kilo bar of Belgian chocolate, can't beat the taste or the price (better than Ghiardelli).    If you prefer a milk chocolate taste rather than a dark chocolate, pick a bittersweet chocolate to bake with, something that's about 53% cocoa.

Whatever you do - just don't use chocolate chips.  They're coated in edible wax so they keep their shape in cookies - it's not something you want in your mousse.
