Sauteed portabella mushrooms, onions, bell peppers, a bit of white wine and some spices, with some melted gorgonzola cheese on top and put on a slice of toasted russian dark wheat bread.

It's my day off, so I can actually cook.  So I'm making beef stew.  It was originally  going to be venison stew, but the venison smelled off and I haven't taken any more from the freezer.  I'll add red wine, onions, garlic, red bell peppers, parsnips, potatoes and perhaps barley, with some thyme and bay.  Add to that some homemade biscuits and perhaps a cherry pie if I'm feeling horribly ambitious.   Half goes next door to my sister, and leftovers in the freezer for work.
