I lived in northern Nevada for a while and there is a significant Basque pressence there consequently many good Basque restaurants.  Mountain oysters are a standard on the bill of fare...quite tasty.  Since the majority of the Basque restaurants I frequented were "homestyle"  no problem with seconds on anything.  Had that event been held in Elko, a much smaller town,  I am convinced that the amount served would have much higher.

Hi thompson,
 
I am aware of the Basque folks over in Nevada.  It is not surprising
that they have all parts of the sheep on the menu.  We have
one local steak house that serves mountain oysters here,
but I have not been brave enough to try that!  lol

How so very undommely....common girl suck it up and belly up to the bar....bang your fist down and demand a plate of sheep balls.  Order a glass of red and enjoy yourself.  After your third helping you will wipe your chin on your sleeve and wonder why it took you so long to try this delicious delicacy.
It is a case of mind over matter....if you don't mind it wont matter.[;)]

Fried Sheep balls?

YUK! disgusting...

Now simmered several hours in red wine and butter some garlic, some say rosemary but I think sage is better...

Serve with a full body red or some people like theirs with  a strong stout, or other dark beer

I am a finicky eater but do like sushi, which many Americans
regard as being bait.  To each their own when it comes to
dining preferences.  [;)]

I too like sushi...the first time I had it was in Japan and they gave me that hot mustard sauce that goes with it and I disregarded the waitresses message of caution and smeared it on....I thought I was going to die...I could not breath...all of the japs in the lil shop thought I was having a heart attack...once they realized I was just a dumb gaigin they had a good laugh and gave me lots of beer and advice on the best sushi...

Yeah, I made the mistake of thinking that wasabi was based on
avocado, like a form of guacamole!  3 glasses of water later...

Sage is the better choice and the red I prefer would be a bourdeaux.  The family style basque reataurants in Elko tend to serve chianti but they will break out the boudeaux if you want to pay for it.

I have never had wasabi domestically that was anywhere near as breathtaking as what they offer in japan...a little and I do mean a little goes a long way...for me a level teaspoon would do probably 5 pounds of sushi...domestically a the same amount would do for a standard serving.
As for the mountain oysters all you need to do is try them if you do not like them just move on to something else....but one should not let emotion control the pallet...I never thought I would appreciate a woman with a strap-on till I tried it[;)].  Now I am addicted.
