Ron does have a way of doing that.  I blame it all on him

Works for me!

I blame lots of things on him, actually.  He just doesn't know about it.

You come to the boards asking for breakfast ideas cause you don't want to google it?  Given that there are a ton of recipe sites out there and www.foodnetwork.com alone has searchable recipes by ingrediants, why not invest a few minutes to search this out?  Heck they even tell you if the recipe is easy or not.  Only you know what is suitable for your owners.  You know if they have high cholesterol and need to limit certain foods or on a diet and need to keep the calories down.

Chorizo and eggs are something I like to make.

I love Mexican variations for breakfast. Use a flour tortilla instead of a bread.

I make an awesome skillet breakfast, which is basically homefries with bell pepper, onion, fried potatoes. Add in your breakfast meat, and then scramble eggs and cheese in

Okay on a more serious note, Huevos Rancheros are easy - heat up some refried beans with garlic & onion (sauteed the garlic & onion first, in a teeny bit of olive oil, then stir in the beans).  Heat up some tortillas (flour or corn, your choice).  Cook an egg over easy (or poached for the healthier version), and begin assembling.

Layer your plate in the following order:

Tortilla
Beans
Shredded cheese
Salsa
Egg
Sour Cream
Avocado
Sprinkle some olives over that

And have a feast!

Home fries are great, too - in a skillet with olive oil, sautee bell pepper (any color or a variety), garlic, onion and potato.  I season my potatoes with salt & pepper and Emeril's "Essence."  Melt cheese on this or not - your option.  Scramble in eggs, or serve eggs on the side.

And my all time favorite and so easy and healthy:
Sautee garlic in some olive oil (notice the garlic theme?), then add in fresh baby spinach (add a lot, as it really thins out).  When the spinach becomes succulent (isn't that a great word?), scramble in some eggs.  When the eggs are about done, sprinkle some shredded cheddar, or a jack/cheddar blend (or any other cheese - you can buy pre-shredded cheese for convenience).  You can also add tomato if you like, and onion...etc...But to keep it simple, on mornings when I'm hungry and don't want to make anything fancy, this dish takes about 5 minutes and is wonderful.

One of the favorites at my bed and breakfast was peach stuffed french toast and country ham....of course anything you serve with a big slab of country ham with the bone still in is always good....

Peach Stuffed French Toast.....you could easily change out the fruit
Ingredients:
3 oz. pkg. cream cheese, softened
1/2 cup chopped peaches

2 T chopped pecans
1 T honey
6-8 slices French bread, cut diagonally 1 1/2 inches thick

2 eggs
1/2 cup half n half
1/4 tsp vanilla

In small bowl, beat cream cheese until light and fluffy. Add peaches, pecans and honey; blend well. Cut pocket in top rounded edge of each bread slice. Carefully fill each with 1 1/2 tablespoons of cheese mixture.
Heat large skillet. In shallow bowl, slightly beat eggs. Add half and half and vanilla; mix well. Dip stuffed bread slices in egg mixture, coating both sides. Cook in skillet over medium heat 3 to 4 minutes each side. If desired, serve with butter and maple syrup.

There are tons of breakfast recipes on any of the bed and breakfast web sites such as bbonline.com and bedandbreakfast.com and bbim.org

Has anyone mentioned steak yet? Steak and eggs is always a favorite of mine. Add some crispy homemade hash browns and a few slices of toast made from homemade bread....mmmmmmmm.

Going along with Lucky Albatross' omelette idea, I'd suggest quiche.  There are infinite variations, and it freezes wonderfully.  You can also make it without the crust or in the microwave.    If you're going to be using  baking mix, I'd suggest making your own.  That way, if you want to use less fat, or no trans fats, or a combination of whole wheat flour and white flour, you can adjust it.  I make large batches and store it in an airtight container.

I'm typically about fast breakfasts -- apples, bananas, tea.  Can't hurt to have a well stocked fruit bowl on the table.

When I think ahead, I'll sometimes put rolled oats in a bowl a couple handfuls of raisins, sprinkle of cinnamon; cover it with apple cider and let it soak overnight.   Served with chilled almond milk.

In the Middle East, where I'm from originally, the breakfast menu is typically very different from the North American variety, and many I've spoken to in North America enjoy it, so here goes:

Tomato and cucumber salad (dice tomatos, cucumbers, and spanish onion as thinly as you can, add a touch of salt, sugar, fresh ground pepper, tad of olive oil, balsamic vinegar).

Avocado (mash the avocado in a bowl with a bit of lemon juice, salt, black pepper, olive oil).

Onion quiche (if you're interested, I'll post the recipe).

Freshly baked breads.

Assorted cheeses (feta, chevrie, cottage, ricotta, etc.)

Smoked fish, such as White fish or Salmon.

Fresh fruit, particularly berries.

Remember that a lot has to do with the presentation of a table, not just the food itself.  Everything from the folding of the napkin and the proper alignment of the cutlery to creatively decorating the food.

Neither submissive nor slave, but an enthusiastic cook here:

Eggs: scrambled, poached, fried, coddled. Multiple kinds of omelettes with different textures, and then multiple additions to the different omelettes. Baked eggs, like frittatas.

French toast is good, yes. Pancakes and crepes. Crepes are harder, but good and impressive for company.

Baked items. Quick breads, including muffins, can be mostly prepared ahead of time, if you like, and then the final mixing and baking can be done in the morning. Scones are one of my breakfast staples, and, again, like omelettes, you can play with texture and add-ins.

Potato options. Chickpeas, if pre-cooked, can be fried up in a man with a little onion and ginger, and make a wonderful breakfast side. Freeze tofu ahead of time, slice it thinly, and saute it with some onion, and garlic if that's to your taste.

Consider vegetables. Breakfast should be a balanced meal. Roasted cauliflower and sauteed zucchini are good breakfast options. Tomatoes, lightly sauteed canned tomatoes in winter, with a little basil and garlic, and sliced and eaten raw with fresh basil leaves or pesto in summer. Corn, with lime and chipotle chiles. (And take this and turn it into a breakfast burrito with some tomato salsa, eggs, sausage, black beans, and wrapped in a whole wheat tortilla.) Asparagus, especially roasted with a little pecorino cheese crumbled on top. Artichokes with lemon.

Experiment with breakfast meats, and with faux-meats. I'm a great fan of Gimme Lean sausage.

There are store-bought solutions, of course, that require little preparation. Yogurt--often my weekday breakfast. Farina, oatmeal, grits, and cold cereals. Bagels and bialys. Doughnuts. Edit: and smoked fish--trout, salmon, whitefish.

Finally, get a book like Joy of Cooking and check out its breakfast and brunch options for good, basic recipes that you can play with.

Monica

Edit: And oh, yes, quiche! And avocados! I like avocados with either lime or balsamic, but I might have to try your lemon and pepper version, Barnone.

i cook three meals a day, but breakfast is always my favorite!

Eggs -
omelettes - infinite variation of "stuffings" - onions & peppers; spinach & feta; tomatoes & onions; zuchinni, etc - whatever you have on hand!
Scrambled eggs - for extra deliciousness add 1/4 cup of cottage cheese & 1/4 cup of shredded cheese to eggs mixture BEFORE cooking - yummy!
Sunny side up - these aren't easy!  Start the eggs on high heat & turn to low once the whites are cooked
Hard boiled - easy to have on hand and ready for a quick breakfast
Sandwich or wrap - for serving "to go" meals - add cheese or salsa

Pancakes - buy a mix that just needs water & you are always ready to make them!  Add things like chocolate chips, bananas, sliced apple, etc

One of the ways to make breakfast "special" is to always try to have 3 things on the plate -
So I will do pancakes with eggs & fruit, or eggs with hash browns and fruit, or eggs, fried pierogies and fruit, and so on.  Just sliced oranges, apple or melon makes a big difference in presenting a full meal for breakfast, and these things are easy to keep on hand.

Oh - and other things I like to add to the breakfast plate - refried beans, sliced tomatoes, steamed edamame, muffins, biscuits
