argh! i gotta tell ya, i am so frustrated tryin to figure out what to make for dinner!! It seems we are in a rut and i'm always fixin the same ol things and nothing at all even sounds good any longer. i am all out of fresh ideas, i tried some out of a cookbook, but someone always ends up not liking it... and not only that but i dont always have "1/4 tsp ginger" or 1/2 tsp tartar" around.  *sigh* but i've come up with an idea!! yayy me!! i thought maybe we could kinda exchange dinner recipes. That way, maybe we could all have some fresh ideas for dinner!! mmmmm i need something new to cook!! Ok, this recipe is one of my favs, its my smothered burritos. (yes i'm from Texas originally, so i do alot of tex-mex) lol. Anyways, here is the recipe!!
Smothered Burritos
 
Make your burritos ya fav way, and put them in a large baking pan (cake pan or something). Get a can of cream of chicken soup, mix it with a 1/2 can milk in a sauce pan and warm it up. You can add a can of diced green chile's if ya wish, however i leave that out because of the um's, they dont like them. Pour this evenly over the burritos. Cover this with as much grated cheese as ya like, cheddar or the mexican style cheese, and bake at 375 in ya oven until it is all gooey and melted!! Let cool a few and then serve!!

I have a whole database of recipes if you want some easy to make things.  I will share two with you right now.  Write me on the otherside if you want more.

This is actually a Weight Watchers Recipe with a few modifications

Bruschetta Chicken Bake                      Bake @ 400 Degrees for 30 mins

2 14 oz can diced tomatoes
1 16oz  pkg. stuffing mix (seasoned)
1 t. Chicken Base
1 C. Water
4 garlic cloves (minced)
1 t. Italian seasoning
3 ½ lbs diced chicken breast (bite sized)
2 C. FF Shredded Mozzarella Cheese

Mix together; Tomatoes, Stuffing Mix,  Chicken Base, Water, Garlic and Seasoning.  Stir until moistened.  Place chicken in 9x13 sprayed pan.  Sprinkle with cheese, top with stuffing mixture. 

6 servings
Freezes Well

This is a recipe I use at the grouphome where I work.  My clients LOVE this.  Its easy, inexpensive and tasty.

Corn Dog Casserole

1 ½ lb hot dogs
2 eggs
1 ½ C milk
2 tsp rubbed sage
¼ tsp pepper
2 pkg (8 ½ oz each) cornbread mix
2 C cheddar cheese, divided

Preheat oven to 400º.  Cut hot dogs into bite sized pieces.  Stir all ingredients together.  Add 1 ½ cups cheese.  Spread into 9 x 13 inch dish.  Place remaining cheese on top.  Bake 30 min.

Serve with ketchup and/or mustard.

Taco Flavored Chicken Enchiladas                          Preheat Oven to 350

2 boneless chicken breasts
1 pkg. Taco Seasoning
1/4 C Water
18 corn tortillas (approximate amount)
1 jar Ragu Mozzarella and Parmesan Sauce

Cook Chicken breasts and shread.  Place taco seasoning and water in skillet with shredded chicken mix together and cook until water is reduced.  Heat Tortillas in microwave for 30 seconds.  Place 2 T. of chicken mixture into tortilla, spread down the middle of tortilla and roll into enchilada, place in a 9 x 13 inch pan, repeat for all tortillas.  Pour Sauce over all tortillas, Place into oven for 15 to 20 mins.  Top with shredded cheese, diced tomatoes, chilis, onions, shredded lettuce, sliced olives.

Taco pasta

2 boxes of shells and cheese
1lb  of hamburgher
1 pachage of taco seasoning
1 Jar of Medium salsa
1 bag of shredded mexican style cheese
1 diced tomatoe
Green onions to taste


PreHeat oven to 350
Make Shells and cheese just like you normally would. Brown hamburger with taco seasoning. Mix shells and cheese, hamburger, and salsa. Layer in baking dish with cheese, tomato and grean onions bake for 30 minutes.

Onion Pork Chops

Get a pkg. 4-5 pork chops and some Lipton's dehydrated beefy onion soup.
Put both packages of soup in a bag and shake.  Add the pork chops and shake again to distribute evenly.  Place the chops in a pan that is lined with aluminum foil and cover with another piece of foil.  Bake in a moderate 350 degree oven for 45 minutes to an hour, depending on the thickness of the chops.  Uncover and place in broiler for five minutes to brown. 
Take out and place on serving platter, add whatever veggies you like.  Throw away the foil carefully and wipe the pan clean!

chicken fajitas

3 chix breasts - cubed
onion
green pepper
red pepper
3 to 4 cloves of garlic
yellow pepper
cilantro
lemon juice
ground cumin, Mrs. Dash, garlic salt (to season garlic and chicken while cooking)
any package of chicken fajita seasoning
shred ched cheese
salsa
sour cream
tortillas

cook under medium setting the chicken and garlic with approx 2 to 3 tablespoon of oil ...then add ground cumin, Mrs Dash and salt while cooking (season to your preference).

follow the instructions on the chicken fajita seasoning package and add diced red, yellow, and green peppers and onion to the mixture and simmer for 5 to 10 minutes

add a dash or two of lemon juice and chopped cilantro

warm tortillas in microwave or on pan under low setting

fill and top with salsa, shred ched and sour cream


you may notice i don't have 1/2 or 1/4 cup to the recipe - that's entirely up to you how much you want to add to this recipe.

maybe we should turn this thread around. I suggest a "what do I make" database, since sometimes we ahve no idea what to eat or not sure if tehre is even anything edible in the house, you post what food items you have in your house and everyone else tries to use said ingrediants to come up with a meal.

hmm ok.. anyone got any tomato recipes lol, i've got 3 plants bustin out tomatos faster then we can eat them and no end in sight yet lol, maybe i need to can them for the winter lol! oh and once again.. thank you all very much for the wonderful new recipes!! mmmmmm mmmmm

Grilled eggplant sandwiches...
I like my eggplant peeled.  If you like the skin on then you can leave it.
Peel and slice an eggplant (make the slices a little under a quarter inch thick).  Brush it with a good olive oil on both sides and grill until soft and brown.  Cut open a good loaf of Italian bread and toast under the broiler.  After toasted, drizzle both halves with balsamic vinegar.  Put some slices of mozz on one side and back under the broiler until melted.  Then add some nice fresh Romain lettuce, roasted red peppers, the eggplant and some kosher salt and pepper.  It's really good tasting.  This would work really well as a panini I think.  I'll let you know when I get a press.

If any of those tomatoes are still green, fried green tomatoes are yummy.  Put together a mixture of flour, salt, pepper, garlic powder or garlic salt, onion powder & onion salt, & a little dried basil if you have it. 

Slice up the green tomatoes about 1/4 to 1/2 inch thick.   Dip in flour mixture & coat thoroughly.  (You are more than welcome to dip in egg first, but it isn't necessary.)  Place in a frying pan with heated oil.   (I like olive oil, but use what you have on hand.) When bottom side of tomatoe is browned, flip over & fry till browned on other side. 

Other fresh tomatoe ideas:
Mozzarella- tomatoe salad.  Cube mozzerella cheese into 1/2 inch cubes.  Half tomatoe & slice into 1 inch wedges.  Put cheese & tomatoes in bowl.  Drizzle with olive oil, toss some fresh basil in with it, & toss till coated with oil. 

Salsa, of course. 

Homemade spagetti sauce is awesome, but lots of work. 

Tomatoes diced into large pieces & tossed together with a little mayonaise & ketchup.

Toss them into a crock pot with just about any meat you have, & pertinent seasonings.

i stew them and use em for a thick sort of juice in a chili concarnie  well that and i add all the veggies uncooked including more tomatoes

Something healthy for the kids (and the adults)

Cream Cheese Fruit Dip

1 block of Fat Free or low fat cream cheese (softened)
4 pkgs of Splenda or other sugar free sweetner.  (I use Great Value Altern)

place softened cream cheese in a bowl, empty splenda on top and mix really well.

Wash, core and cut up apple slices or chunks and dip into cream cheese mixture  use it as a great snack or dessert for your family or yourself.  Is also very good with Strawberries, bananas, pears, oranges etc.....


Reduced Fat Peanut Butter Fruit Dip

1 C. reduced Fat Peanut Butter
6 pkgs Splenda or other sugar free sweetner.  (I use Great Value Altern)

Place peanut butter in bowl, empty splenda packets on top of peanut butter.  This requires some elbow grease to get mixed up really smooth.  Might be best to use a mixer or small food processor.

Flavored Applesauce  2 variations

(1)
1 Qt of unsweetened applesauce
1 small pkg of sugar free jello

Pour Applesauce into a bowl..shake jello over applesauce (don't dump it on top or beneath) and stir to thoroughly mix..Refrigerate to chill, serve cold.

(2)
1 Qt of unsweetened applesauce
1/2 container of sugar free drink mix (I use Great Value)

Pour Applesauce into a bowl..pour drink mix over applesauce and stir to thoroughly mix..Refrigerate to chill, serve cold.

Stuffed Tomatoes:

2 med-large tomatoes
1 can tunafish
2 tbsp chopped onion
diced celery, salt and pepper to taste

Slice the top off the tomato and scoop out the " guts". Put in a bowl and mix with the other ingredients and fill tomato shells. Chill and serve.

You can also use chicken salad if you prefer.
