I'm eclectic........

I like my wines (I do make my own.)   I also have a single stage distillation unit that I use to make ports and they are GREAT.

I love bourbons and have made my own.   (They were excellent, but aging them totally sux.)

I also make a few flavored liquors.    These are always great but they don't compete with the BEST of my ports.   My best liquor is a ciniman apple that is so easy to make it is stupid........

6 cups of brandee (the cheap stuff will do)
6 red skinned apples chopped
1.5 cups sugar
a 4 inch cinamin stick broken up

Throw it all into a jug and stir daily until the sugar is dissolved.   Let sit in a dark place for 6 weeks then strain and serve warmed.   If this stuff don't get you laid, nothing will.

lmao!  your brandy recipe sounds interesting, i might have to try it!

i remember as a kid, my dad would make home made wine in bottles and put a balloon on the top of whatever bottle he was using.  when the balloon was fully inflated, he said it was ready...it was always really gross looking to me, but what did i know at 10 years old?

My liquor (pronounced lik-coor) recipe totally rocks.   I wish I could claim it as my own, but I can't.  A lady who was a master at flavored booze taught it to me.    I taught her a lot about fermenting wines and she taught me how to flavor the strong liquors.    She also taught me how to make dark shine (a take off on moon shine).  I am not set up to make it and it takes a lot of work for me to make a small quantity with my gear, but it is sooooooo good.

You can use a balloon as an air lock for secondary fermentation and it does work well if you keep up with it.   That said, there are very cheap air locks available today that you put on the carboy and totally forget about.  My best wines are the ones that I baby through primary fermentation (e.g. 2 or 3 weeks) then rack and forget about.   Once they go to secondary fermentation, you really don't want to mess with them. Just let them age.

p.s. - It is good to rack them once or twice in the first few months of secondary.    Gotta get them off the initial sediments.    After that, put them in the back of a closet and forget them for a year or two.    That is where the BEST wines come from.

Right now I am favoring whiskey (Irish) and whisky (Scotch) but summer is not on the assent as the days are getting longer so.... there is the hope of gin with lots of soda and limes on the horizion.

Well let's see.   As for a straight shot I like Jose Quervo, but as for an actual drink I like the four horsemen of the appocalipse.  It consists of Jack, Jim, Jhonny, and Quervo layered in a shot glass.  It goes down hard but that's what I love about it.

margaritas

I LOVE Margaritas..........but don't bother buying one east of the Mississippi.     We do many great things in the South, but Margaritas are not among them.

Red wines. I've grown up on the stuff.. so it's just yummy to me.

I've never been drunk before (despite taking down what must've been a lethal dose..), so I've given up on that prospect. A glass of wine with a good meal is about as much as I ever have. And, meh, it works for me.

I'm not a spirits drinker at all, never touch them.

A glass of red wine with a meal.

A pint of English ale is as good as it gets on this planet, on the universe and in the afterlife.

I'm a sailor- so of course I drink rum.  My favorite is Barbancourt- the 15 year old stuff- don't like light rum.  But I'm also happy drinking whisky (either spelling)- and waddaya know- Fargle and I both like Makers Mark- except how can you ruin it with ice?  Happily drink Irish (generally Jamesons) Scotch- (favorite is the 104 Glenfarclas, but haven't seen it in years.) - I still like things like Talisker- but that DOES need ice.  An old standby is Crown Royal.  In the winter time- I brew up hot cocoa- nice and thick- and add a little bracer- either rum or whisky will work- just as long as its not smoky.

I'm also happy drinking wines: red, white, rose (a good rose is hard to find, but not to be sneered at.) and champagne.

I tend not to drink beers in the winter- spring or fall and on tap- love a good Black and Tan.  But hey- I like de Red Stripe too mon.

Sam

I love the TGIFriday's Orange Dream mix.

And just about any drink with rum, spiced rum, coconut rum, banana liquer, orange juice, pineapple juice, you get the picture.  And an umbrella.

And I love a good Sam Adams beer, nice and frosty.
