Texas many years ago, and they talked about grilling skirt and flank steaks over the fire way back around the 1900s. What is known along the Rio Grande and in the US as Pico de Gallo is called Salsa Cruda or Salsa Mexicana Cruda down in Mexico. I know a LOT about Cocina Mexicana. whayhay, Traditional Cornish pasties use skirt for the meat, nothing else is good enough.
