CHICAGO - Dining on foie gras — a delicacy made of duck and goose liver — will soon be legal again in Chicago.

The City Council on Wednesday repealed its two-year-old ban on the gourmet dish, drawing dissent from animal rights activists who consider foie gras cruel because the birds are force-fed to make their livers bigger.

But there were no worries in chef Didier Durand's restaurant, Cyrano's Bistrot.

YAY! I can FINALLY book my flight to Chicago. A city that bans foie gras deserved nothing but my boycott [8D] (as if they gave a toss rofl).

Hmmmmmmmmm... foie gras.

And then you can come down here, and eat some crawfish with me. [;)]

I've never ate foie gras.  I think the fact that it's made out of liver has always kept me away from it.  My mother used to make liver and onions when I was a kid, and I can't stand the smell of it to this day.

But a plate of crawfish with some butter and hot sauce along with a cold beer is heaven.

Ugh, put liver on a plate near me, and watch me run. But I think (could be wrong) that the foie gras doesn't reek the same way.

Hence their nickname, mudbugs. [;)]

Okay, the foie gras has to be chilled and the knife that's used to cut it has to be plunged in some hot water beforehand so that it melts through the foie as it slices it... oh my god, I just about came... and the toast has to be the perfect consistency and crustiness, no joking with the bread here - it's got to be just so.

Oh god, I'm going to die of barfness from Level's cockroaches of the river though, rofl. Not that I wouldn't LOVE to meet up with him for any other delicacy he can think of :-) . Steak au poivre? That's a nice Texan dish [8D] .

Same here. Don't toxins gather in the liver?

[8D] It wouldn't be the first time, dc. At least you-know-who won't send me a nasty letter.....

I may try it one of these days.  What's it taste like?

kittinSol -> RE: Chicago overturns two year ban on foie gras (5/14/2008 7:36:52 PM)

The French have been eating stinking unpasteurised cheeses, foie gras, raw sheep brain in vinaigrette (authentic) and other horrors for centuries, and they're still around to tell the tale :-) . Toxins are good for us, they, huh, help us build resistance to them... and stuff.

PS: and they taste beautiful, goes without saying [8D] .
