OK, So I'm not much of a meat eater.  I was pretty much born this way.  Just never liked biting into meat.
Not fond of the taste much either.  I'm not a vegetarian, I do like the occassional hamburger.

Anyway...I do cook a lot of meat.  As everyone I know loves it.  Different marinades...I don't think I've made a meatloaf the same way twice in my entire life.

Since it is BBQ season does anyone have a wonderful recipe they can share?  A specific type of rub or marinade...different way of cooking the meat?  Whether it be beef..poultry..it doesn't matter.  I'm willing to try it all and then some.

My favorite marinade for steaks is...
equal parts honey, soy sauce, fresh squeezed lemon juice and olive oil.  Crush some garlic in it and throw it on the steaks in a ziploc for a few hours.  then throw them on the grill.  I then take the leftover marinade and add it to about four yellow onions, sliced thin and a bunch of mushrooms sliced in a pan.  cook that all together for about and hour until the mushrooms and onions are carmelized and nicely browned.  Serve along side the steak with some grilled red peppers and grilled corn.  Yum.

Ok, I'm gonna get flamed big time here, but I'd put my ribs up against anybodie's, anytime.

I boil my pork ribs in brown sugar water for 60 to 75 minutes, then apply the sauce and braise them.
 
I make very tender, fall off the bone Ribs, without the use of a dry rub, and the hours it takes to smoke them.

You can use any BBQ sauce you like on my recipe, but the two I use are...
Open Pit Hickory combined with Sweet Baby Ray's, or my personal favorite...A1 sauce.

rob, i've been boiling my ribs for years...it's the best way i know to make sure they are tender and not dry after you put them on the grill.

lol...ok im a southern girl and if we want good ribs...we get em ready the night before and start smoking as soon as we get up so as soon as that dinner bell rings they are done and juicy and oh so tender...I live in Iowa now and STILL do this even though my neighbors think im nuts they always come ask for some...

as far as a good BBQ sauce...hmmm...

this may sound wierd but..i loves it...

start with an original flavored pre packaged brand as the recipe for home made i am NOT giving out..sorry...family thing
Next add 2 table spoons brown sugar 1 tea spoon wosh...worsh...the lea and perrins stuff cuz i cant say it let alone spell the damn thing.
1/2 a tomato either diced finely or crushed and ripped up....for those in anger management..go with ripping it apart
1 clove garlic finely chopped or pulverized in a processor...
1/4 cup dijon mustard...

I know that sounds soooooooooooooooooooo messed up but it makes the perfect sweet and tangy BBQ sauce...best for chicken...not bad on porkchops though...

Smoking is the BEST way to get Fall off the Bone ribs and still have the flavor of the Meat in the Rib or Meat Product however fpr those of you unable to Smoke your meat yes Boiling works it just also Boils most of the fat out of the meat as well and I don't mean the bad fat that can be cut away I mean the fat in the meat that gives youl Flavor.

I do Country Style Smoked Pork Ribs and I make my own sauce from Scratch using ULTRA SECRET Ingredents (Vinigar, Brown Sugar, Honey, Salt, Pepper, Liguid Smoke, and Homemade Catsup, plus a blend of herbs you would never think go into BBQ Sauce)

Smoke the ribs High up and for a Long time with Cherry, Apple, and Hickory Woods tripple soaked and Soaked in Apple/Lemon Juice.

Then I make homemade Mash with Potatoes and Squash and Garlic (Fresh and Crushed)

And finish it off with Grilled Squash/Zucchinni and Asperagus with Holandais sause (Can't spell it but I can make it from scratch)

For dessert..... Grilled Apples and Vanilla Bean Ice Cream.

Woo hoo! Party at Steel's house!

On topic now, salmon is great on the grill with a short ginger/soy marinade before.  As to the whole boil thing, I ate some somewhere where they did the opposite.  They grilled to seal the outside then smoked for flavor then put in a crock pot of sauce to keep them moist.  For ribs, don't forget to remove that nasty membrane on the back before you cook them.

I'm going to try everyones marinade...of course.  I've never cooked a rib and boiled it first...apparently it makes a difference and a big one?

Its hard to cook when you have to rely on other peoples feedback on how it tastes. 

Anyway...going to boil up some ribs in brown sugar...I'm assuming that would be dark brown rather than light..since dark has more flavor?

Can't do Steel's ribs..we don't have a smoker.  Maybe we just need to caravan over to his house sometime?  We do have a nifty new radiant grill....I've done a few roasts on it so far this summer.  I'm told they are succulent coming off the grill.
Maybe I'll paint some marinade on my burger while I'm cooking the meat for others....mmm...sounds good.

If you are using a Stock Pot and you want to Sweet Boil your ribs a cup and a half of Brown Sugar will saturate nicely in a Pot that is 3/5 of the way full and bring the watter to at least a simmer before adding the Sugar.

I don't know what the person who suggested the Brown Sugar Water Boiling would but I would suggest bringing it to a Boil first and then dropping the meat in if it's still on the bone you don't want to chance having the Bone ends get coated and then Caramelize the ends cause then the insides won't cook right which is why I try to get professionally Butchered ribs they are more expensive but end up being better when cooked.

Just my two cents even though I wasn't exactly asked for them.

Ribs.
Take a metal colander and put it upside down in a large pot. Add two bottles of very dark beer then plop meat on top of upside downed colander. Cover pot, steam ribs for about an hour or until slightly loose adding more beer if needed.
Grill outdoors or in oven broiler to brown, then add sauce of choice.

I have an amazing sauce (Jennys Super Sticky Finger Licky BBQ Sauce) that I can dig out (maybe) if anyone is interested. It is genuinely the best BBQ sauce I have ever ever ever made. Yes it has vinegar in it.

Yes we are interested....Thanks Stell as well for the info...I'm making recipe cards for each person's idea.  I will try each and every one this summer.

Yes, boiling will get the ribs tender and tasteless. Steaming with beer instead is a little better.

Slow smoking is definitely the best way to go. A purpose built smoker is the easiest but you can smoke ribs in a standard Weber kettle grill. A good dry rub, equal parts garlic powder, onion powder, salt, brown sugar and paprika is a good basic rub, put on the ribs 24 hours in advance of cooking followed by 6 to 8 hours in the smoker will result in phenomenal ribs. At that point sauce is unnecessary but if if you insist a decent homemade sauce is salt pork or fat back, dark molasses, tomato sauce, apple cide vinegar, tobasco and garlic* simmered until just a little thinner than you think it should be.

* Can't tell you ratios or other ingredients since it is my grandmothers recipe and she made me promise.

Until I came up with the beer steaming concept, I had always simmered my ribs in water with a healthy splash (half a cup or so) apple cider vinegar and spices before finishing them by grilling.
Never have I had tough or chewy ribs. Seriously. I have wretched TMJ and in order for me to eat ribs they need to be very tender.

Maybe the trick is to not boil them for too long?

There are things you can do to add flavor to meat you want to cook in liquid. Braising is slow cooking tough meat in a flavorful liquid until it is tender, think good pot roast. The thing is these all take hours to do. One of the main ideas of the process is to convert the connective tissues in the meat into collagen which is what give slow cooked meats that great mouth feel. Same thing for homemade stock as well.

Boiling is too hot and too fast to create collagen but does dilute the fat and a lot of the other volatile chemicals associated with good flavor. Adding brown sugar to the water will result in some of the sugar being retained in the meat which will make up for some of the lost flavor. Steaming is better since there isn't all that liquid to dilute the meats flavors.

I've never tried it but in theory braising ribs in something approximating the flavors of the dry rubs and mop sauces used in smoking ribs might work but that is still going to take 4 or 5 hours to get tender fall off the bone ribs.

Ah. You know I realised that I don't actually boil them, more of a simmer. Either way I've never turned out tough ribs.
I've also wrapped them in heavy foil (seasoned) and slow baked them.

Creativity is needed when there is no room for a bbq grill or smoker!

I'm hungry too after reading this thread, my dinner tonight is a tasty delightful nutritious bowl of oatmeal.
