For Ribs, I use a rub, then braise them for 2 to 3 hours on a low slow cook, then finish them off on a med hot grill with smoke.  I've changed the recipe for the rub a couple of times, trying to find the "perfect" combination.  It got adjusted again a couple months ago thanks to watching way to much FoodNetwork lol.  I've tried this one a couple of times since, and it's turned out great.
 
Dry rub - 8 parts brown sugar, 3 parts salt, 1 part chili powder, 1 part "special mix" ( equal parts cumin, ground black pepper, cayene powder, onion powder, half part each rubbed sage and rubbed thyme).  That mixture gets spread liberally on both sides, then the ribs get wrapped in foil and put in the fridge for 4 to 6 hours (usually do that the night before they're gonna be made).  After they've sat in the dry rub for a while, I put them in a wet mix to soak for another 2 to 3 hours - 1 cup White Wine, 2 T Apple Cider vinegar, 2 T worchestershire, 2 T dark mollasses or honey (depending on what I have on hand lol), 4 partially smashed garlic cloves, a handful of whole pepper corns.  After they've had a Minimum of 8 hours total combined marinating time in the dry/wet combination - they get sealed into heavy duty foil with a bit of the wet marinade poured in, then put in a 300F oven for 2.5 hours.  At the end of that, they go on the grill for about 20 minutes to get repeatedly basted with homemade BBQ sauce that I  make from the braising liquid and a bit of tomato paste. 
 
(Dinner IS sounding really good right now... and I've got some lamb ribs in the fridge that I can get some adjusted rub on to cook for tomorrow while I scrounge up something less complicated for tonight... )

Chicken -

marinated overnight in tequila, fresh lime juice, grated lime zest, red pepper flakes, fresh garlic, a little sea salt and black pepper.

OK, I'm starting with Robs ribs tonight...then down the list.  I made steak for dinner last night on the grill....so Aileens will be later this week. 

I've always loved cooking and always looking for new recipes and new ways as well

Here is a easy side meat dish. Cut up Kielbasi into small round pieces and fry it in Sweet and Sour Duck Sauce. It can be done on aluminum foil on top of the grill. You can even put toothpicks in each piece. It is a camping and cookout favorite of mine.

Okay guys I am Type II so here is something that is SURPRIZINGLY Good considering how EASY and Non Professional it is and I hope someone tries it tonight to show people how good it actually is.

COLA CHICKEN (And Variations on it)

I am Typing this up from memory cause of how easy it is.

Ingredents for Main Dish

3 Chicken Breasts
A Cup Ketchup (I always eyeball it and just squirt it in)
A Can DIET Cola (Believe it or not Diet is necessary cause otherwise it doesn't taste right)


Get Three Boneless Skinless Chicken Breasts Cooked (I use a George Forman Grill for this)
Cut intro Fajita sized strips (3/4 wide by 1 1/2 long) Put in Skillet
Add Ketchup and Cola
Raise Heat to HIGH and STICK AROUND
When it starts to Boil keep stiring and Reduce the Cola and Ketchup Mixture
Eventually it will thicken to BBQ Consistency. It isn't Amazing but it is really good

I eat this on top of half a cup of Brown rice with a Salad and Green Beans Quick Meal takes less than 45 minuets once eveything is prepped.

VARIATIONS

Use Honey and Orange Soda for a Oriental Flare and serve over Noodles with Soy Sauce. Just as Quick.

Our Personal Favorite is the Mexi Wrap

This is exactly how we do it.

In a LARGE Skillet
6 chicken Breasts cut into Fajita Strips
1 Can Diet Cola
1 Can Diced Tomatoes (Mexi Style with Green Chillies and a little spice)
1 cup Ketchup
1 tbsp Lusiana Style Hot sauce or Tapatio Hot Cause

Then Reduce to a THICK consistency this could take awhile but don't just leave it to reduce without stirring or it will burn
We use a Low Carb wrap called FlatOut Wraps they come in a varity of flavors and actually TASTE GOOD.
Fat Free Sour Cream (Skinny Cow has a very good flavored one that none of my friends could tell was Fat Free)
and FRESH Pico De Gallo (Salsa really chunky not very hot)

I would make Spanish Rice as a side dish and have it with a Fresh Coarse Salad and Red Wine Vinigarette.

If you are WW it comes to (2 1/2 each Wrap, 3 points for Rice, 1 point each Tablespoon of Sourcream) 10 points for 2 full wraps Table spoon Sour Cream EACH and Half a cup of the rice and all the salad you could eat.

Good Meal and if you cut out the rice VERY CARB Concious.

An ex roommate has type II diabetes and we used to cook diet coke can chicken all the time. Same idea as beer can chicken, stick can up into where the chickens guts used to be and stand bird up on legs and can over a medium low fire till done. Not bad, not as good as a real good beer but close enough.

Instead of boiling all the flavor out, remove the membrane on the back side of the rib.  This is what makes them very tough when cooked.  When you boil them the high temp simply melts this away, but you lose all the fat as stated earlier, No fat No flavor

I have smoked and BBQ them with the membrane off and they come out very tender.

This is one of our favorite meals from the Food Network:

BBQ Meatloaf

1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

Fruit Kabobs
This can be a desert or side dish.
You can use any 3 fresh fruits these are my favorites.
 
Fresh pineapple chunks
Apple slices
Watermelon balls
 
  • Soak wooden skewers for one hour in water
  • Sprinkle the cut side with sugar and let sit for five minutes
  • Place fruit skewers on heated grill until golden brown
  • Place grilled kabobs on plate and drizzle with caramel or chocolate sauce

Trying the BBQ meatloaf tonight.  Everyone thanks...you've given me a lot of different options to try out....I'm almost through all of them to.  Most I will make again and again.
