Maybe because the Irish of today were the lucky ones who survived the potato famine?  According to some posts, I can't claim to be of Irish heritage yet all my research going back to the early 1800's shows my great great grand dad was born in Donegal Bay and married a lass from Tipperary. *sigh*  So damn my grandfather for marrying a Ukrainian woman and then my dad for marring a French Canadian.

FYI.....when asked, I state my heritage is part Irish/Ukrainian/French yet I am also Canadian. Like the saying goes"God made whiskey so the Irish wouldn't rule the world"

Hmmm well since Ireland has become a much more diverse country, does this mean that no one born in there is Irish unless they are Catholic. Boy aren't they going to be pissed.
Oh and by the way, just as a side note. My parents are from County Cork, they moved to Virginia (the south) ! year before I was born. They are both Irish and live in the south. And yes since it seems to be a qualifier I am catholic.

i grew up North of the mason/Dixon line, in a very Irish(German too) family. My maternal grandmother was a O'Shaughnessy, the "O" being dropped b/c no one cares who You are the brother or son of, considering Irish folks have a minimum of 23 siblings!
Potatoes are what they are, cheap and a staple of most Irish folks diet. Before i married my Phili/Italian husband, i had never eaten rice, and b/c my (now ex) father-in-law had to live in the caves when the Japanese attacked his country, thus only eating potatoes for eighteen months, my ex husband has never eaten potatoes before he and i married. Was hilarious to watch my in-laws fight over which starch to serve to make everyone comfortable! Almost as jocular as watching my Irish aunts and uncles debate the finer points of making cherry or raspberry cordial with an all Scots uncle (he grew up in Scotland) who married into our family!
Although i was adopted when i was three months old, i have always considered my environment to have a strong impact on me. i have met and know my biological family, who are French and English.
On that note my 13y/o UM only claims to be Italian, so go figure!

More than likely, these people you meet are claiming a part of their heritage, a part to which they identify strongly with. The thing with human nature is we have this need to feel we belong to something, whether it's our nationality or our ancestral roots. Take myself as an example, my ancestry breaks down to 1/4 Irish, 1/8 Ukrainian, 1/8 Scottish and 1/2 French Canadian; yet I identify more towards my Irish heritage than I do with the French side. I can't see how one can be annoyed by others who do identify as Irish or German or Dutch, etc. It's no different then a person who is a staunch monarchist who shows great pride in the British empire and the pomp and royalty from England.
If I wanted to really split hairs on this matter, I could argue that in a technical sense, I am not a true Canadian since my ancestry originated from elsewhere. The only true Canadians are the aboriginals who settled this continent way back in Pleistocene ice age during the Cenozoic era. But this is all mote point.
  I simply look upon this as people are having a sense of pride in their ancestry and to some extent, proud to claim a part of their heritage and maybe their entire heritage.
