COCONUT RUM BALLS!

Ingredients:
4 cups vanilla wafer crumbs
1 1/3 cup flaked coconut
1/4 cup Frenched Cocoa Powder
1 cup walnuts, finely chopped
1/2 can (14-oz. size) sweetened condensed milk
1/4 cup Karo Light Corn Syrup OR
1/8 cup Karo Light Corn Syrup and 1/8 cup Maple Syrup
1/2 cup rum
powdered sugar

Crush or grind the vanilla wafers. Add nuts, coconut, cocoa powder and mix together until completely blended. Pour in condensed milk, Karo syrup (or karo syrup and maple syrup), and rum and mix thoroughly until mixture becomes a soft, pliable paste, the consistency of play-doh.

Roll into 100-120 small balls. Roll balls in powdered sugar. Allow to 'age' at 50-70 degrees Fahrenheit for 1 week before serving. (Rum balls can be sprinkled with powdered sugar again before serving, if desired.

Karo Syrup comes in the lite variety now.  Less sugar

The holidays I'm pretty much all over anything pumpkin and anything with yams, sweet potatoes.

Sweet potato souffle.  Though, I don't have exact measurements as I make it differently each time I make it.

Just an FYI.............these puppies are freakin' AWESOME!!!!!!!!!!

I am SO making the rum balls this year!

I'll be posting some of my favorite recipes over the weekend, I'm at work right now and my recipe box is at home.

The dump cake got its name from all you do is dump the ingredients in the cake pan and bake.  NO fuss or muss... and it is soooo friggin' good!

Yeah, I have to post my recipe for the most versatile holiday cookie ever... and one of my very favorites. They're called Biscotti Guifani, and the recipe has to be translated from the Sicilian (since that's what it's in in my grandma's cookbook). These things are -great-, and they're very basic, so you can do just about anything with them, from dipping them in chocolate or icing, to rolling them in sprinkles or (my favorite) sesame seeds or pinon (pine nuts).

4 cups white flour, sifted
1/2 tsp baking powder
2 cups powdered sugar
1/4 tsp salt

2 eggs plus 2 egg yolks
1/4 cup light cream
2 tsp vanilla extract OR 1 tsp almond extract OR 1/2 tsp anise extract and 1/2 tsp ground anise seed

1 lb butter OR
1/2 lb butter and 1/2 lb lard, coconut, or palm kernel oil (yes, it has to be those.. don't use Crisco or one of those other hydrogenated vegetable shortenings)
1 cup granulated sugar

2 egg whites, lightly beaten

Colored sugars
Ground nuts
Icing
sprinkles
chocolate chips
chopped nuts
candied cherries
raisings
dates

Combine the dry ingredients and sift into a large mixing bowl.

In a smaller mixing bowl, combine eggs, cream, and extracts and beat until yellow and frothy.

In a 3rd bowl, beat butter and sugar together until fluffy.

Combine butter and egg mixture, and beat thoroughly until smooth. Gradually add 1/3 of the flour, until a batter is formed. Remove from mixer. Add flour, 1 cup at a time, mixing carefully with a wooden spoon between additions until a thick, uniform dough is formed. Turn the dough out onto a board and knead briefly. If you wish, you can add coconut, chocolate chips, nuts, cherries, raisins, or dates to the dough during the brief kneading process.

Roll the dough into 1/2" balls. Dip the top of the ball into egg whites, and place on a lightly-greased cookie sheet. If desired, the top of the cookie can be dipped in colored sugar, sprinkles, etc.

Bake in 375 degree Fahrenheit oven for ~20 minutes, or until bottom is browned and top is lightly golden. Cool and store in covered container.

damn, you ppl make me so jealous, i can't bake for chit, always manage to mess something up.  but then again, cub just bought me a new stove, so maybe i'll have some success this holiday season.  i'm the type of person who uses the smoke alarm as a baking timer, lol, i get into an essay or a research project and forget i have stuff baking.  things might get a little crisp but i have yet to set fire to the kitchen!

Favorite Eggnog recipe

6 eggs
1/2 cup rum
2 cups heavy cream
1/2 cup brandy
1 cup milk
1/2 cup whiskey
3/4 - 1 cup sugar
1 tbsp nutmeg

Separate the eggs (yolk from the white). Set the whites aside. Mix yolks well, gradually adding the cream, milk, and sugar. Get back to the egg white - WHIP IT (whip it good!) until "soft peaks" form. Fold the white into the rest. Gradually add the alcohol. Either add nutmeg right away, or sprinkle on top later. Refrigerate for at least 2 hours uncovered.
