I wish we could have fiddleheads all year, they only grow for about a month, and they are awesome.

For Bear, the candied yams are simply yams (or sweet potatoes) baked in a casserole dish, covered with brown sugar and marshmallows.  And some butter. I don't really have a recipe, I just eyeball it.  It's hard to mess up, lol.

Drop a big spoonful of some really good quality vanilla ice cream in the bottom of your beautiful etched glass holiday mug  (geez, I sound like freakin' Martha Stewart here)

1/2 a shot (or so) of Capt. Morgan's Spiced Rum over that

Fill with eggnog (and not that canned stuff, either!), top with real whipped cream and nutmeg.

Since I cook like a mad fiend year round and have no problem making most of those items whenever the mood strikes, the one holiday thing I can't make and only purchase  once or twice, is eggnog.

I have gotten into the habit of giving gift baskets of homemade goodies of the sort few people make anymore, at least around here. I always enclude a jar or two of my home made, canned, applesauce. There would be a revolt if I didn't. Also two other items people beg me to never leave out is homemade fudge and homemade pralines. No one I know around here, even knew what pralines were, let alone how to make them. I know grown men that would cry if they didn't get them. I learned to make them after a trip to Savannah and being enticed into River Street Sweets by that divine smell. I brought 2 pounds home with me then began researching online for the perfect recipe to recreate that devine treat. The rest is history. So pralines would also have to be on my list.

This year I am going to try and recreate a very old fruit cake recipe I had 20 years ago. None of those nasty creepy coloured chunks, only real brandy soaked dried fruits and nuts. I found a recipe on Epicurious that is close, the least amount of modifying. You make it a month or more in advance and soak it with a good brandy or rum once a week. Lots of butter, nuts, eggs, dried fruits and a really good french brandy. How could it be bad?

I do not like eggnog.... (However, if you tell me there's really booze in it, I will probably have some... lol)

My Grandmother knows how much I love the jellied cranberry sauce (Won't touch the other stuff... ICK!), so she serves it just about every time I come over for dinner... So I DO have that year round...

But Pumkin pie is one of my favorites... Sweets' too... So I think we will probably have it around our house all the time... lol  (yeah... that's what WE need.... Pie every day.... RIIIIGHT! We both already sit around talking about how fat we are... lol)

I will let you know how it turns out. Could be a huge waste of time, who knows. I am sure it will be edible, but as fantastic as the one I had 20 years ago......we will see.

I don't go in for such things as entire dishes, but I'm partial to marzipan, mincemeat (as in mince pies) and turkey.

Well the ingredients and preparation sound divine. I haven't had a proper fruitcake since my Aunt Deena passed away in the early 90's! Hers was like that, big brandy drenched real dried fruits and a moist really savory, not too sweet moist liquor soaked cake that was just fragrant with cinnamon, nutmeg, and I don't know what else. We used to eat it with a little glass of port, food heaven. So let me know, I would love the recipe if it comes out well. I am sure it will. [8D]

Mmmmmmmmmm, port! Something else I usually only have during the cold weather months. I foresee a trip to the liquor store in my near future.

I used to make old style fruit cakes, dark dark, with brown sugar and a touch of molasses, sultanas raisins, currants, chopped peel, lots of crushed almonds and laced with brandy, lots of nutmeg, cinnamon allspice... glace cherries but finely chopped but nothing else fruit wise, my great grandmothers recipe handed down. I stopped making it for years cos no one else in the family really liked it, (any fruit cake)
But I do love it so.
I love marzipan toooo altho I like it handmade not store bought
mince pies and christmas pudding with rum or brandy sauce

My mom has a recipe for a good fruitcake with booze soaked dried fruit but she refuses to share her recipe! Though when I do make pumpkin pie, I prefer taking time to use a whole pumpkin, clean the seeds and then peel, chop and cook it as opposed to the canned filling.

Candied Yams are the result of some southern lunitic (in the south, we call them eccentrics) getting the idea that the BEST thing to do would be to take a vegitable and put some marshmellows on top of it. It is very, very scarey.

BTW, to truly booze drenched fruitcake - i don't drink. so i don't imbied, so I can't tell you from personal experience - but the monks at the Trappist Abbey of Gethsemane in Bardstown, Kentucky, make and sell one that I have heard great things about. They are online. (I hear they are drenched with Ky Bourbon, so I have not tasted them, even when I have been to the monastary for retreat - and they put them out for virtually every meal for their guests, there)
