I have the large one also. I make a big batch of whatever interests me then use one of these for all the extra. (doesnt hurt if you have a freezer)

Crock Pot Chicken 'n Taters

3 tablespoons flour
1 1/2 tsp dried oregano
1 tsp salt
1/2 tsp fresh ground pepper
1 frying chicken cut up (3 lbs of chicken pieces)
2 tablespoons olive oil
4 small baking potatoes, cut each into 8 wedges
2 small onions, cut into thin wedges
4 cloves garlic, minced
1/4 cup chicken broth
1/4 cup dry white wine
1/4 cup chopped fresh parsley
lemon wedges

Combine flour, oregano, salt and pepper in a large bowl or ziploc bag. Trim fat from chicken and discard. Add the chicken pieces to the bowl or bag, several at a time. Toss or shake to coat. Heat oil in a skillet and fry chicken pieces 10 to 12 minutes until browned.

Put potatoes, onion and garlic in crock pot. Add broth and wine. Place chicken pieces on top and pour pan juices over all. Cook on low 6 to 7 hours or on high for 3 to 3 1/2 until potatoes and chicken are tender. Sprinkle with parsley. Serve with lemon wedges.

Dublin Coddle

2 lb. thick pork link sausages
Salt and pepper
2 lg. sliced onions
2 garlic cloves, minced
1 lb. thickly sliced ham
4 lg. potatoes, thickly sliced
2 bottles Mike's Hard cider
Chopped parsley Boil sausages and ham in Mike's Hard Cider for 5 minutes, remove meat from Cider and reserve liquid. In crock pot, layer the potatoes with the onions. Add salt and pepper to taste. Add garlic, Sprinkle with parsley. Layer meat on top. Add enough of the reserved liquid to cover. Cook on low 6 to 7 hours. Serve with Irish Soda Bread.  Erin's Irish Soda Bread 
3 cups all purpose flour
¼ cup sugar
½ tsp salt
1 tsp baking soda
½ tsp baking powder
¼ tsp cream of tartar
6 Tblsp butter
¼ cup caraway seeds
1 cup raisins
1 cup currants
1 ½ cups buttermilk

preheat oven to 350 degrees

      In large bowl, combine the flour, salt, baking soda, baking powder and cream of tartar. 
      Cut in the butter with a pastry cutter until the mixture resembles coarse crumbs.  Mix in the caraway seeds and raisins.  Add the buttermilk, stirring until blended.  Knead the dough briefly on a floured work surface.  Shape into a round loaf and place it in a buttered and floured 8 inch cast iron pan (a cookie sheet or baking stone works fine too).  Cut a cross  about 1/2 inch deep and 3 to 4 inches wide across the top of loaf.  Bake for 45 minutes and cool on a rack. 
Serve with butter.
Makes 1 loaf

Dublin Dumplin' Stew

I lb. Pork, boneless, trimmed and cut into 1 inch cubes.
2 tablespoons butter
1/2 cup chopped onion
1/2 cup chopped celery
3 cloves garlic, minced
5 medium carrots cut into pennies
3 cups water
1 tablespoon beef buillion granules.
1/4 cup flour mixed with 1/2 cup hot water until smooth
1 teaspoon salt
10 oz bag frozen mixed peas and corn

In skillet on high heat, brown the pork in the butter.
Add onion, celery, garlic cook until veggies are tender. Transfer to crock pot. Add the 3 cups water, carrots, buillion, frozen veggies and salt. Cook on low 6 to 7 hours. Add water and flour mixture, stirring while adding to keep smooth. Simmer another 20 mins before adding dumplings.

Dumplings

Combine these first six:
1 1/2 cups all purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon caraway seeds
1/2 teaspoon salt
1/4 teaspoon ground mustard
............................
Beat:
1 egg
2/3 cup milk
2 tablespoons olive oil
............................
Add to the first 6 ingredients until just moistened, then drop by tablespoonfuls into bubbling stew, and cover, simmer for 25 to 30 minutes until dumplings are cooked through. (You may want to turn crock pot up to high to cook the dumplings)

Note* You can also use one tube of Pillsbury Grands Biscuits and kneed in the caraway seeds, salt and dry mustard.

I cup flour, 1/3 cup Hershey's cocoa, 1/3 cup brown sugar and mix it together.
 
In a bowl mix 13 cup Hershey's cocoa and 1/2 cup brown sugar.
 
Sprinkle this on top, do not mix together.
 
Pour 1 cup of boiling water on top, DO NOT stir.
 
Leave on high about 3 hours.
 
You will find a chocolate cake on top with hot fudge sauce on the bottom. Serve over vanilla ice cream, yummy!
 
Yankee Pot Roast;
 
I chuck roast
3 onions halved
I bag baby carrots
4 stalks celery cut into large chunks
6 or 8 potatoes peeled and quartered
4 beef bouillon cubes
2 tablespoons kitchen bouquet
3 tablespoons cornstarch
 
Put all in Crockpot, put on high, come back in 8 hours, it is dinner.

Ya, the 6.5 quarter is on the big side too..... It's perfect for larger roasts or chicken but not for the 2 of us here.

And be honest, S2S, yer in crockpot heaven!!!

  Then I must be really pathetic. When it came time for my birthday and Christmas, Lumus had to specifically tell me to ask for something for ME, that it was not the kitchen's birthday or Christmas time for the kitchen. My first preference is usually kitchen-goodies..... I'm thinking right now that we need a new can opener, knife sharpener and I could really use a decent knife. Ooooo, and a new coffee maker, with a timer! (So I don't have to get up at 530 am to make coffee but can stay in bed and snuggle....)

5 pound pork roast, browned

1 onion, sliced

1 red bell pepper, coarsely chopped

2 carrots, cut into circles

1/4 C. brown sugar, not packed

1 can crushed pineapple or a fresh one, sliced

1 T. tomato paste

1 T. soy sauce

salt and pepper to taste

a pinch of ground ginger or a few slices fresh
Sear the pork roast in a heavy fry pan.
Add the pork roast to the slow cooker after browning it. In the same pan you browned the roast in, add the remaining ingredients. Stir together to blend and add to the cooker.

Cook on low for 8 hours.
 
One of my mother's best Sunday dinners.

Oh good lord,  this is downright dangerous information in my hands.  I had no idea you could do cakes in a crock pot.

Guess what I got from my Master for Christmas?  Some silicone kitchen utensils I've been wanting and my new collar!  I was very happy on both accounts!

In the past I have been most pleased with Christmas presents that included a Ryobi straight shaft weedeater, a trailer to pull behind my riding lawnmower (for hauling plants, potting soil, etc.), a chainsaw and a 4 cup electric percolator coffeemaker.

Man....now I am definitely going to convince someone to let me cook on occasion.....
