kittin, salmonella attaches itself to proteins, which peanuts are chock full of.  Pretty easy one there.  But yes, very important to read labels and make sure you're getting actual food and not pseudo foodlike product substances that are for consumption in various forms... or something like that. >.<

lol, the last time I tried freshly ground natural peanut butter it kinda tasted like slightly moist peanut dust. Like a pepto bismol texture.Ick. But maybe it would be worth another try. I <3 peanut butter.

Actually, sugar is a preservative used to retard the growth of bacteria.  That is why cakes and candies require no refrigeration.

Blimey, I'm learning it all today. I know that sugar is used in the preserving process, such as in jams, etc... but also thought that it encouraged bacteria to grow if hygiene wasn't up to a certain standard?

You can easily make your own peanut, cashew, almond and hazelnut butters at home. Buy the roasted nuts (or raw and roast yourself).
Ingredients:
  • 1 1/2 c. unsalted roasted peanuts
  • 1 tbsp. peanut oil
Utensils:
  • food processor
  • bowl
  • mixing spoon
  • storage container
  • measuring cups and spoons
Directions: For smooth peanut butter:
  1. Mix the peanuts with the peanut oil, and pour the mixture into the food processor.
  2. Process the mixture until it's very smooth.
  3. Store your smooth peanut butter in a sealed container in the fridge. It will be good for 2 weeks.
For chunky peanut butter:
  1. Take about 1/4 cup out of your 1 1/2 cups of peanuts and set them aside.
  2. Mix the rest of the peanuts with the oil, and pour the mixture into the food processor.
  3. Process the mixture until it's very smooth, then stir in the peanuts that you had set aside.
  4. Process a few seconds more to create the chunks in your chunky peanut butter.
  5. Store your chunky peanut butter in a sealed container in the fridge. It will be good for 2 weeks.
Serves: 12
If you like it a little sweeter add a tbl. of honey.

Thank you for taking the time to look that up, I'm definitely going to try it and never realised just how simple it would be... I guess that's b/c we get used to all the crap they put into the general-shelf stuff.

I've been making my own for years..just buy a jar now and then for Masters use as he doesn't want to wait if I don't have any made. The same formula works for other nuts as well though I would not suggest brazil nuts, walnuts or pine nuts.

Their warning people off all items containing peanut butter right now til they rack down the source. Apparently there have been 6 deaths.
Officials are focusing on peanut paste, as well as peanut butter, produced at a Blakely, Ga., facility owned by Peanut Corp. of America. Its peanut butter is not sold directly to consumers but distributed to institutions and food companies. But the peanut paste, made from roasted peanuts, is an ingredient in cookies, cakes and other products that people buy in the supermarket.
