Do they make ground chicken then? Just out of curiosity?

I made the other night chicken breasts stuffed with some cooked spinach and low fat sharp provolone cheese and some onions basted in a low sodium organic chicken broth it turned out well.

I know the question was specifically about chicken, but if you really want to treat yourself and get a change, venison is very low in fat content and much healthier than a beef roast from the local grocery store. May be hard to come by where you live, but worth the effort.

mnottertail -> RE: The Chicken Challenge (10/14/2009 4:25:59 PM)

yes, but get you some breasts and grind your own, you lazy thing, I thought you were in 'training' and I don't mean cock gobbling school.

Throw on the spandex and crank it out.

Hunting season is coming up so it shouldn't be too hard to find soon. I just have a hard time cooking venison so that it doesn't taste so gamey.

Non-gamey. . . . easy-peasy!  Specify to the butcher that you only want to eat Bambi's mother!

one, make sure it is fresh and wasnt hanging in some macho guys yard in the heat all day, cool it down quickly.

Two *and this is important* use like safflower oil, unless you can get camilla or tea seed oil. and get it close to smoking, and sear the entire outside of that meat.

Gamey taste gone.

There are actually hundreds of ways to cook chicken, but in the end it is chicken. If you're tired of it try turkey. Still poultry, but has a different texture and moisture. There is also a turkey version of most beef and pork products. I love turkey burgers with turkey bacon. Yum.

A chicken recipe I like is diced chicken soaked in hawaiian marinade, the cooked in a pan with onions, mushrooms, and pineapple. When it's done, mix it into a large bowl of rice. It's fabulous.

Butting in here... fat is good for you, lots of lean protein without fat or carbs, isn't, so be sure to get one or the other; Google "rabbit starvation" if you don't believe me.

Fat... eaten in the absence of carbs, will not only do you no harm, but will help heal your body and metabolism.

impishlilhellcat -> RE: The Chicken Challenge (10/14/2009 4:47:49 PM)

I know. The idea is to combine good carbs such as brown rice, or whole wheat pasta with a good lean protein.

I was just specifically asking about chicken because there are good carbs for days. I really am trying to do this the healthiest most sustainable way possible.

kajirastar -> RE: The Chicken Challenge (10/14/2009 4:48:32 PM)

twisted is correct
if you like hot foods cayenne and others are a great way to boost metabolism !
chicken nachos  all my friends and family adore this

ok a bit more high in fat and calories but use low fat cheeses and baked chips

spread refried (non fat added green chilis) on the tortilla chips
use a non stick pam spray and cook chicken with salt pepper cayenne chili powder cumin garlic
add to the top of nachos
sprinkle low fat cheese and broil till the cheese is melted
then you can add salsa fresh tomatoes lettuce jalepenos cilantro etc

YUM!

Chicken fajitas are great! Also I make a broccoli, chicken, rice, and cheddar casserole that is pretty awesome. I don't like a lot of the things that make such dishes bad (such as mayo) it might be good, but that cheddar will cost ya. Make it just like a broccoli casserole sans mayo, add chuncked chicken, and rice and bake a usual.

1 tablespoon of olive oil is 100 calories. Olive oil cooking spray is 0. that saves you anywhere from 700-1400 calories in just one week, depending on how often you'd cook chicken in that. Also, don't forget about beans!! Beans are fat free, high in fiber, and high in protein. Just this evening i had some left over baked chicken, some northern beans, a little sprinkle of low-fat cheddar cheese and a little plain greek yogurt all rolled up in a tortilla! Mmmm! Also, don't forget about lentils. They are so good and you can cook them in so many ways.

fluffypet61 -> RE: The Chicken Challenge (10/14/2009 6:30:58 PM)

Cabot makes several 50% Reduced fat Cheeses - Cheddar, PepperJack & Jalapeno Cheddar.
And a 75% Reduced Fat Cheddar.

Weight Watchers has a Reduced fat Shredded Mexican style cheese.

There are several brands of Fat Free sliced American cheeses - Kroger, Borden, Kraft ...

There's also Fat Free Cottage Cheese, Sour Cream and Ricotta Cheese.

All these cheeses will expand your low fat recipe choices and give you protein and calcium, too, without fat or with reduced fat.

How about a veggie lasagne using Fat Free Ricotta?

I eat quite a bit of cheese as it is because I loveeeee cheese. All of it usually fat free or low fat.

I actually have a really hard time some days meeting the amount of calories I need to.
