Another lean meat that is so far superiour to venison but also very lean AND digests easier than many of the more commonly eaten red meats is buffalo. I am addicted to it. Fortunately it is easy for me to get through a local butcher. Check with your independent butcher shops and see if anyone carries it. Very juicy, lean and tender, without the gamey taste some venison has. It just tastes like the best beef steak you've ever eaten.

About venison, always ask your hunter friends about the kill. If he talks about wounding it and tracking it for two days, thank him politely and toss it in the garbage. If it isn't a clean kill, you will never get the adrenaline out. To soften the taste, marinate it.

And you can mix it with ground beef for a meatloaf, etc if craving beef.....

I can also create dishes for you with just a list of ingredients in your pantry and refrigerator.

I too have a personal trainer and have lost 15lb's in the last month working to loose another 50, so i am familiar with your dilemma.

Hello imp,
Here's a recipe my sister makes and it's great!

Cook this in a big covered skillet.

NON STUFFED PEPPERS

A pound of ground chicken or turkey (she uses venison)
Brown it with a chopped up onion and some garlic (season as you like it)
then add 2 cans of stewed tomatoes.  I use the ones with chilis.
And then a cup of rice.  Let it cook until the rice is done.

Cut up some peppers (color doesn't matter) into thirds or halves
put them on top of the stuffing and then let them steam.
She puts cheese on top of them, but I don't.

And voila!  non stuffed peppers - easy to put in small containers to freeze.

Have funnn!  And you're doing great!

I'm a bachelor, so ya KNOW it'll be simple.

Chicken a la DarkSteven

Spray nonstick spray on a frying pan.  Take some boneless, skinless chicken breasts or, better yet, breast strips, and pan grill them.  After a couple of minutes, add a 50-50 mixture of ranch dressing and salsa to the pan.  Push the chicken so it sits in the glop.  Cook till done, stirring as often as you damn well please.

Add a garnish if you care about looks.

Chicken, a small amount butter and cream, salt, white wine, mushrooms.

Chicken, tomato sauce (Prego is okay too), herbs, zucchini, squash,  onions or leeks, carrots, celery.

Chicken, water to cover, whole garlic cluster (peeled), Onion, paprika, sour cream, premade biscuits for dumplings.

Chicken, breaded, fried in olive oil, add garlic, capers, lemon juice, and a little flour to thicken the sauce.

If you want more exact recipes email me, I have been on the chicken diet too. However, other foods you can eat. Lean pork, Bison, Venison, Elk, Fish, Some shellfish... all these are good for you too.
