SDF, yes it can be done that way. But what I said about the boiling, it means that water gets thick a bit. There is not so much flavor taken out. To me most pork is overcooked anyway. Not long ago I made some chops with a thermometer, just barely done. They were great with no spices at all ! So I do know what you mean.

But to cover them in sauce ruins that anyway, so I go for tender. Also a certain amount of fat is rended and that is good for the meat as well. Baby back pork ribs are a buddy of my Dad's favorite, and I thought it was gross him eating all that cartilage, pre bone stuff, but then I tried it. If you can stomach it, by my estimation that is the best part to eat for health reasons.

Now if you get just the right ribs you can have them come out excellent just from the grill. But sometimes you boil them up to get them mostly cooked, and then you are basically using fire to regulate the fat. How much to burn off ?

Incidentally, who round here knows about cracking them ? Mainly pork ribs but not exclusively, and especially if not boiled, these boys from down home have one more little thaing.

They take the ribs and crack every bone, NOT break them, just crack them. This makes for more flavor and tenderness. You can do it with a decent size butcher knife if you got a good swing on it, but there are other methods.

So who all does that ?

Actually Termy...I have heard of this but using a mallet rather than piercing the meat as you would with say a chinese cleaver. I have heard of it but I have never seen it done in competition. I believe it is in order to get the marrow to be drawn out and into the meat itself. I've heard of it mainly in regards to beef ribs rather than pork.

I'm not a fan of the beef ribs personally.Aside from short ribs but I wouldn't prepare them the same way. Those I would braise in wine and beef stock.

You know what really fucks this all up for me - I don't like BBQ. I don't. I like the meat but ask my friends, if they BBQ and I come over they will hold the sauce on a few of whatever they are making for me.

But everybody's sauce is their own business, I am more concentrating on the cookage of the ribbage. (should that have two Bs or one ?) Sauce can range from "Ick, this is sweeter than honey nut Cheerios" to "Woman, put the fire extinguisher in the bathroom, QUICK !". But the meat is the meat.

Now if you want to discuss the sauce with me, I would suggest you put the fire extinguisher in the bathroom. I am into saucy, hot, vinegry tartness. I know how that sounds, but so what. I am not into sweet, not just because I avoid sugar, but because I avoid sweet and as of the last decade or so, no longer like sweet.

I quit sugar a long time ago and it has become more than that, I quit sweet. Sweet taste is almost sickening to me. I can smell a spoon of sugar in a coffee cup half a room away. And sugar ain't the end of it, even the best of sweeteners, I guess today it is stevia, I have no need for it. None.

But that is me. To satisfy the crowd you have to excite their sweet tooth a bit, so be it. I don't even use ketchup because I find it too sweet. So a discussion with me about sauce is like a whole different universe. The pork itself though, that is a different story.

What would make a good sauce for me ? Maybe next time. I gotta hit the sack soon and I have lots of rabblerousing to catch up on.

Back to the topic. Whats with boiling ribs? "fall off the bone"?.... don't you have teeth?  Even if they are beef ribs. Do you boil your fillet first?, or maybe a cheaper cut of steak because a fillet is .tender enough/

Ok, folks, this is NOT traditional ribs but it's pretty damn good.   When it's too cold to fire up the smoker and do em the hard (and correct) way, Parboil them in pineapple juice.  then put them on the grill to finish.  For the last 2 mins or so, swab on some BBQ sauce but DONT burn the sauce onto the ribs.

Try it, a good shortcut

I use Pork Ribs, it's a matter of personal choice from then on as to what is the best way to cook them.  Me I like to slow smoke them in our smoker (around 200 degrees), I use a dry rub and create a sauce for the very last to coat them.

I use hickory and cherry wood for smoking, I don't soak the wood in wine or anything, why waste the wine when I could be drinking it
