Ribs should be smoked, slowly, gently, with great love and attention. a little misting occasionally with my applejuice/honey combo. They should be enrobed with a glorious and beautiful bark. The smoke ring peeking from beneath like a wisp of lace encircling a creamy thigh. The meat should be juicy and tender full of smoke and spice and all things porkalicious.

I'm dying for some burnt ends right about now. It's too cold to smoke and for me there isn't any other way to do ribs. So what are your thoughts? How do you do your ribs?

Best ribs I ever had were at the Rendevous in Memphis. I liked mine dry rubbed with spices and stuff. Never was a big fan of barbecue sauce.

the way I do them at the bar is to first sprinkle a combo of powdered garlic and brown sugar on them, wrap them in foil and leave them on the hot table for an half hour each side, then plop them on the BBQ fer a bit....

could try useing a wood stove if it's too cold outside lol

Sorry, I'm not giving up my rib secrets. Although , as I've said, I don't care to smoke mine.

We can have a rib cookoff, tho, Jo. I think I would kick your smoked and misted ass.

That's usually what happens when I use the 18 incher. I see it more as tenderizing though. My ankles usually go above my head though.

It's good to be double jointed.

I've tried it pyro...it just isn't the same.

My rub has both plus 12 other ingredients.

Those are damned fine ribs. Although if you want heaven try Memphis in May. I agree that sauce is for serving. I do individual little bowls for those that want it. I'm a purist.

I'll happily volunteer to be the judge of that cookoff!

But really, I've noticed that a considerably high number of us really really love our food. Crock pot recipes, Holly's meatloaf, Aileen's Fondant. We are a group that loves good food aren't we?

I am a female, but I am of the firm belief that it is never too cold to cook out. Too cold to eat out, sure, but never too cold to cook out. I had a friend in Florida whose husband had a smoker, DAMN did that make the best freaking ham I ever had. But to my memory, he didn't have to stand out there for long periods of time. So c'mon Ms. Jo....hop into your parka and gloves and get to cooking! What time will they be ready (ribs are a definate favorite for me).

As for me, I get mine pre-seasoned and then will cook them in the oven at about 200-250 for like 4-5 hours. Makes them very tender.

I think I would like yours and cjan's better though. I promise to be an unbiased judge as long as I get to have me some ribs!

Sigh, I wish I could. I really want some burnt ends. I just moved back from Cali and usually for holidays I smoked a prime rib and we ate on the deck. I'm freezing my ass off when it's under 40. Let alone -40. Perhaps if I could spritz my ribs from the hot tub I would be out there smoking some ribs as we speak. Sigh...

Dammit where's a sub when you need one!

We do seem to love our food. Guess it's all that creative type intelligence!

Come on now, all this brain power and nobody can make ribs ? Go near downtown in a major city and find a big fat Black guy in front of a 55 gallon drum sideways, and cut in half. Ask him. You know why you can get ribs falling off the bone in less than twenty minutes ? Because Momma boiled them up there in the house. (crib to some)

Now ideally if you run a rib operation you reuse the same water as much as you can. Over and over, just replenishing it due to evaporation. Of course you put some seasonings in the water, like peppercorns, salt, and who knows what else they use. When done boiling, spices are applied, and that's what separates the Men from the boys.

In the 55 gallon drum is a heat source that could power the entire planet for about a decade, but us decadent Amerikanns must use it all up in fifteen minutes, watching Malcom or Tyrone slather his blend of sauce and spice almost continuously on your beloved orts of meat. Then he disappears for a minute or two as you watch what looks like your ribs to be go up in flames. Or so it seems. When the Master comes back he just slathers a bit more of that sauce on there and you will be good to go in about two minutes.

You finish your beer, piss on the side of the building, give the man about $20 and drive home. You have now made the perfect ribs.

Termy has it just about right, except I do it on my deck, and I'm still in California and am just waiting for the days to get long enough that I don't have to grill by flashlight.

When I found a woman who wasn't bothered by getting a little bbq sauce up her nose, I married her.

I have never parboiled a rib in my life and I have always had them fall off the bone. parboiling just loses their porkalicious goodness. That is what the rub and a 24 hour wait period is for....to meld the spices in.

My preferred medium is beef rather than pork.  I should point that out.  Glad you approve of the nic, though.
