If Aileen fucks up a boxed cake mix then she has a few more issues with baking than normal.

Ok someone explain parboiling ribs to me. I just don't get it. I can see marinating with some pineapple juice but I just don't understand boiling ribs and losing all that flavor by doing so. Yes, of course I understand it's to tenderize them but there are so many other ways to do so that won't involve boiling them to death.

Really explain this to me and how it makes a difference over marinating for a few hours.

Boiling any kind of meat, including chicken, makes no sense at all to me. You are extracting flavor and nutrition when you do so. Actually, now that I think of it, I woudn't boil vegetables either.

Boiling is part of the process of making stocks. The point being to extract flavors and nutrition .

I agree, this is why parboiling baffles me. Maybe someone that does use that method can explain what difference it makes in the prep.

I don't smoke mine -- I slow-roast. I have a couple of homemade BBQ sauce blends and other alternatives that work well for me in terms of what to put ON the ribs -- a BBQ sauce for one of my companions who loves hir ribs swimming in sauce; a dry rub for another companion who prefers smoky, dark ribs; and a blend of crushed dried fruits, coconut butter, and spices that makes a tasty, tasty luau-like treat.

By slow-roast, I mean heat no higher than 250 degrees F, for a minimum of 6 hours, with the ribs wrapped in banana leaves (or, if I can't find those, lotus leaves work pretty well, too, and I can get those from the oriental market). Usually, there is a little bit of pineapple or apricot juice in the bottom of the pan to keep them moist -- and I keep that topped up so that it doesn't scorch. BBQ sauce or glaze, when we use them, goes on in the last 2 hours -- the ribs are (carefully) unwrapped from the leaves, the BBQ sauce or glaze is brushed on, and repeated every 15 minutes for an hour... then they're left to finish the last hour on their own, getting crispy and browned.

Works for us.

Ok...that's it. I have now decided to do a rib tour throughout the US and visit every single one of you who knows how to cook ribs! Been reading this thread and now have a craving for some damn good ribs!!!!  Sad to say, everyone I know parbils ribs before cooking them in the oven. Okay.....no fussing as the line up starts here for me to visit>>>>>>>>>>>>X

Do share..I would be interested in your method. I just don't get parboiling in order to precook the ribs themselves. Why would marinating in beer not work equally as well?
