One of these days I'm gonna research just what they do to make tofu.

Soak the beans for a day or so. grind the beans, boil the beans, strain out the solids. You now have soy milk. Then you coagulate the proteins using calcium sulfate which results in silken tofu. Press out some of the liquid and you get firm tofu. I've been told you can do it at home but most commercial tofu is produced with minimal additives so I just buy what I need.


With minimal additives, I gotta go along with just buying it. I'm not feeling quite that ambitious!

For some reason, I can't post over on the boards, but saw your question. While it's expensive, you might want to look into coconut oil- at least for cooking and baking. Also, my understanding is that Ghee, which is a clarified butter, has no casien in it- and you can buy it at Whole Foods. Or, you can make your own at home from regular butter! Basically, the casien evaporates, at least that is my understanding:

I'm a foody myself, with a bunch of dietary restrictions, so I'm used to finding alternatives to make food more palatable. Good luck!

Another yummy spread (at least to me....) that is also healthy, is hummus. I never buy it, just make it in the blender.

Easy as hell to do and it's relatively easy to keep the ingredients on hand. The only real perishable is the lemon juice as the tahini lasts a long time in the fridge.
