Eggplant parmigiana, Tofu stir fry, Hamburgers made with Boca burgers, Cheese sandwiches, Spaghetti with meatless sauce, cheese pizza, Bean burrito or taco, Cheese Enchilada.  Simply a lentil soup with salad and a roll.

What's the goal?  Is anything else off limits, such as dairy?

You can always just substitute tofu for meat in an existing recipe.  Or combine a soup or vegetarian stew with a salad and maybe a roll.

I make up a salad- with broccoli and mushrooms and anything else to throw in.  add a vinegar type of sauce prior to serving-

Homemade Mashed Potatoes Recipe Ingredients:
2 pounds potatoes (russets or yukon golds)
1/2 cup half-and-half
3 tablespoons butter
salt and pepper
Let’s get started. Take your potatoes and peel them. Then cut them in a few big pieces. Like three or four pieces. Sure they will cook for a bit longer but they will also suck in less water and taste better because of it. Now put those cut potatoes into a pot, cover them with cold water and add some salt. Bring them to boil and then let them simmer for about 15 minutes. How do you know your potatoes are cooked? Pierce one with a knife or a fork – if its soft then it’s done.
Now comes a little trick that will get rid of even more water and will make this homemade mashed potatoes recipe taste even better. First drain the potatoes and then return them to your pot and put them back on your stove set to low heat. This will make all the excess water evaporate. Just be careful you don’t burn them.
Now its time to mash the potatoes. Add some more salt and pepper (taste the potatoes!) and add warm half milk half cream and butter to your mashed potatoes. Then use a wire masher or a potato ricer or whatever… :) even a fork will work if you are in the wilderness :) and mash the potatoes. And you are done and this homemade mashed potatoes recipe is finished.

These are good too!


2 1/2 pounds potatoes (Yukon gold or Russets are best for mashed potatoes)
1 cup shredded extra-sharp cheddar cheese
1 cup milk
2 tablespoons reduced-fat sour cream
4 bacon slices, cooked and crumbled
1/2 cup chopped green onions
salt and pepper
Peel the potatoes. Cut them into big pieces. Big pieces suck up less water and mashed potatoes will taste better. Put them into a pot and cover them with cold water. Add salt and bring to boil. When the water boils you can turn the heat down (or your stove will be really messy) and let your potatoes simmer for fifteen or twenty minutes. When they are soft and tender they are done.
Now drain them and return them to your pot. Put the pot back on low heat. Why? By doing this you will get rid of all the water and mashed potatoes will taste better. Just make sure you don’t burn them.
Now add cheese and milk and mash the potatoes. Put them back on fire and cook them until all the cheese melts. Make sure you keep stirring so you don’t burn the potatoes. When the cheese melts you can add the rest of ingredients – sour cream, bacon, green onions, salt, and pepper. Using this much potatoes will feed around 8 people, so you can easily cut all the ingredients in half in you don’t need so much mashed potatoes.
Also, if you like, you can replace bacon with prosciutto. This is the end of this bacon and cheddar mashed potatoes recipe. Enjoy your potatoes.

I make a spinach ball appetizer for parties that everyone LOVES, it's not too hard, can be made ahead and frozen, or brought and kept warm in a crock pot, plus is easy to eat.

walk outside and eat your lawn, really there are dandelions, a Great Greek dish with Olive oil and lemon, there are mushrooms, sure some may kill you, but hey it adds to the thrill,

or search veggie dishes on google and get a couple million

I break out marshmallows and pretzels.

- no muss-  no fuzz.   no meat.   I don't dirty any pots or pans.   I then have more time to hang out online.

I would suggest a vegetable curry, for example onions, spinach, potato and okra, served with rice or chapattis.

Tacos made with Morningstar crumbles. Quick easy and much lower in fat than with ground beef. A staple for years when my kids were little until the teen discovered the real thing and now begs for that instead.

Went vegetarian almost 2 years ago now. All I did was stop buying meat, period. I didn't get any new recipes nor did I start buying anything new from the store. I just cut it out of my diet and made everything the same as before. Stir fry just has no chicken in it. Pizza has no pepperoni on it. Burritos have no ground beef in the bean/cheese/rice mixture. And so on.

Zero change in diet except no animal body parts anymore :)
Much healthier, happier, and I've saved hundreds or thousands on the grocery bill.

Morningstar veggie burgers rock too, I love them. I have made meatloaf with crumbled veggie burgers for vegetarian friends and it came out great, lots of seasoned bread crumbs, eggs, chopped veggies, I topped it with barbeque sauce and served with spinach salad. Big hit.

One of my favorite easy things is the basic portobello mushroom cap grilled burger. I just brush it with some olive oil, garlic, a splash of worcestire sauce and grill it to your taste. I like mine with no bun, but you can put it in a pita and use veggies or condiments of your choice. It is sooooo good.

Also, for a snack, I love just some edamame, lightly steamed and salted, with an icy cold sapporo beer.

A huge pan of roasted veggies, with olive oil and sea salt, is always good, and served with a nice brown rice and maybe a few thick slices of pan sauteed extra firm tofu, and it's a good healthy dinner, meat free.

There's dish my Korean inlaws cook. You slice tofu, dip it in beaten egg, saute it in a pan with a little oil, serve it with a dipping sauce of soy sauce and vinegar and a dash of sesame oil if you have it-otherwise just leave the oil out. Its good, we have it with rice and steamed veggies on the side.

My favorite recipe site is allrecipes.com. You can start an account with them and then keep the recipes you cook in a folder and even add little notes to them if you made changes. Plus people rate the recipes and write in what they did with them so it's not like you are trying something untested.
