Morningstar veggie burgers rock too, I love them. I have made meatloaf with crumbled veggie burgers for vegetarian friends and it came out great, lots of seasoned bread crumbs, eggs, chopped veggies, I topped it with barbeque sauce and served with spinach salad. Big hit. One of my favorite easy things is the basic portobello mushroom cap grilled burger. I just brush it with some olive oil, garlic, a splash of worcestire sauce and grill it to your taste. I like mine with no bun, but you can put it in a pita and use veggies or condiments of your choice. It is sooooo good. Also, for a snack, I love just some edamame, lightly steamed and salted, with an icy cold sapporo beer. A huge pan of roasted veggies, with olive oil and sea salt, is always good, and served with a nice brown rice and maybe a few thick slices of pan sauteed extra firm tofu, and it's a good healthy dinner, meat free.
