Next time don't chop the bacon, cut it in half. But all is not lost. Whack some chicken breasts with a mallet until thin. Season with your fave seasonings (some people like lemon pepper; I use garlic, onion and pepper). Pour off all but about 2 tablespoons of the bacon grease, and put the chicken in the pan. Cook until the edges turn white and turn the chicken. Cook for a couple of minutes until almost done. At this point you would lay the bacon on top, cover with a slice of cheese, and put the lid on for a couple of minutes to finish the chicken and melt the cheese. In your case, with chopped bacon, I would probably do cheese, bacon, and top with another slice of cheese to hold the bacon on. Butter some split rolls or buns and toast in another pan. When the chicken is done, put it on the rolls, and top with your desired condiment (I use ranch dressing, but I've also used spicy mustard). Yummmmmmmm. Here is a step-by-step complete with pictures.
